Air fryer vegetables are my favorite way to cook vegetables for so many reasons!
- They are easy to prepare
- I can cook them from frozen if desired
- Healthier! They don’t use as much oil and retain more nutrients than cooking them at higher heats.
- They have so much flavor thanks to the caramelizing and the charring.
- Perfect for any vegetable that you have on hand!

How to Make Air Fryer Vegetables
- Prepare veggies and place in large mixing bowl. Add oil, garlic, salt, and pepper. Mix to combine.
- Add 2-3 tablespoons water to bottom of air fryer. Set air fryer to 360 degrees. Add veggies and cook 8-10 minutes. Check halfway through cook time and shake or stir. Veggies should be al dente.
- Sprinkle it with parmesan cheese. (optional)
Tips Tricks and FAQs
- To create this recipe I used a 4.1 L air fryer. All air fryers cook differently so you may have to adjust the cooking time or the batch size.
- If you want to save time, you can buy already cut vegetables.
- You want to make sure that your carrots are only ¼” to ½ inch thick. Any variety will work great.
- Don’t forget the garlic! While fresh garlic tastes the best, jarred garlic you keep in the fridge is a nice alternative if needed.
- Broccoli will shrink and char a little. This is okay. The water in the air fryer will help steam the veggies and prevent broccoli from charing too much. (although the char is delicious)
- These air fryer vegetables will be al dente. If you want them to be a little softer just add 1-2 minutes to the cooking time.
Storage
While you can store these to enjoy later, I prefer making a fresh batch every time.
Can I air fry frozen vegetables?
Yes, you can air fry frozen vegetables! You will just want to add 1-2 minutes to the cooking time. You will also want to be sure there is plenty of room for the air to move around between the vegetables to help the water evaporate as they defrost and cook.

- 3 cups broccoli florets
- 1 cup carrots, cut to ½ inch thickness
- ½ red onion, cut in wedges (about ¾ cup)
- 2-3 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 teaspoon Kosher salt
- ⅛ teaspoon black pepper
- 2-3 tablespoons water (optional)
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
