My kids love dessert! In fact, the first thing they ask me after dinner is if we can have dessert! I always love to have some easy dessert recipes on hand that I make in no time! These Red Velvet Cake Mix Cookies as well as our funfetti cookies are just that! They are quick and easy and require minimal ingredients that we usually always have on hand.  I love that I can get all the ingredients out and my kids can even make these while I clean up dinner. This is one cookie recipe you want to add to your cookie recipe collection!

How to Make Red Velvet Cake Mix Cookies

  • Add the cake mix, oil, and eggs to a large mixing bowl.

  • Use a handheld electric whisk to beat the ingredients together.

  • Add the chocolate chips and use a spatula to fold them into the cookie dough.

  • Refrigerate for 1 hour (or up to 2 days).
  • Preheat the oven to 350oF. Line two baking sheets with baking parchment.
  • Scoop out the cookie dough onto the baking sheets (about two heaped tablespoons of dough per cookie).

  • Leave some space in-between each cookie as they will spread during baking.
  • Bake in the center of the preheated oven for 10 minutes.
  • Remove from the oven and leave to cool on the baking tray for 10 minutes then transfer to a wire rack to cool.

Tips Tricks and FAQs 

  • You can use any brand of cake mix that you prefer. 
  • You can swap out the canola oil for vegetable oil if you prefer. 
  • Do not skip the chilling process in this recipe. This prevents the cookies from spreading too much while baking. 
  • While the chocolate chips are a great edition you may omit them.
  • For a very chunky soft on the inside, crisp on the outside cookie – consider leaving your dough overnight or up to 2 days. The flavor will improve and the texture will be even better!

  • If you want a crispier cookie, you will want to increase the baking time to 12 minutes. 
  • When the cookies are done they will still appear soft. These will firm up as they cool. 
  • Feel free to add some additional chocolate chips to the tops of the cookies after you remove them from the oven. 
  • Swap out your milk chocolate chips for white chocolate chips.
