Instant Pot Garlic Hummus
Hummus is the perfect snack filled with tons of protein, thanks to chickpeas being the main ingredient. Buying hummus at the store can get pretty expensive. That is one of the many reasons why I love this Instant Pot Garlic Hummus recipe. Not only does it make a ton, but it is also inexpensive and totally customizable. This recipe takes dried chickpeas and transforms them into a deliciously creamy, flavorful hummus in less than an hour. Not only will your tastebuds thank you, but so will your pocketbook once you make this recipe.

What is hummus?
Hummus is a very popular Middle Eastern Dip and spread that is full of lots of vitamins, minerals, and protein. Hummus has many health benefits, including the ability to fight inflammation, improve blood sugar, offer digestive benefits, lower heart disease, and help with weight loss.
When you make hummus at home, it is a very inexpensive dish that is perfect to serve as a side dish or a snack at your home. Once you make this you won’t ever buy it again.
Ingredients
- 1 1/2 cup dried chickpeas
- 6 cups of water
- 2 Tbsp minced garlic
- 2 tsp salt
- Juice from 1 large lemon
- 1/3 cup tahini paste
- 1/2 cup of reserved chickpea water post-steaming
Instructions
- Place the dried chickpeas, water, salt, and minced garlic in your instant pot.
- Cover with lid, lock, and make sure the steam valve is sealed. Cook on high for 45 minutes.
- Once your chickpeas are done let them sit for 5-10 minutes.
- Strain your chickpeas in a fine strainer and reserve about a half cup or more of the water from the instant pot for later use.
- Add cooked chickpeas, tahini paste, lemon juice, and reserved water in a blender, magic bullet, or food processor to blend. Feel free to add the water gradually to get the texture and thickness you like in your hummus. You can also add more minced garlic, salt, and lemon juice to taste at this point and continue to blend until you get the flavor the way you like it.
Tips, Tricks, and FAQs
- It is best to let your chickpeas soak in water overnight or at least for a few hours before cooking them. This is not a mandatory step.
- Be sure you save at least ½ cup of the chickpea water after they are done cooking in your instant pot.
- If your Instant Pot is large enough, you can make a double batch.
- While blending your ingredients, be sure you scrape the bowl often.
- Add a drizzle of olive oil with some parsley or paprika to garnish your hummus once complete.
Storage
You will want to store your hummus in an airtight container in the fridge. This will keep for up to 5 days. After five days, you will want to discard the leftovers and make them again.
