This Spicy Apricot Ginger Chicken Recipe hits a home run in both taste and versatility. You can either cook it in your crock pot, slow cooker or prepare it in your instant pot. I will give you recipes for all. The flavor is both spicy and sweet. You can turn the spice up as hot or mild as you like. Served with either pasta or rice on the side and you have one delicious easy dinner.
Chicken is one of my all-time favorites to cook. I can eat chicken almost exclusively as my meat choice. Cooking in my instant pot is also quickly becoming my favorite mode of cooking.
Crock Pot/ Slow Cooker Directions
Season the chicken with the salt, pepper and garlic powder.
Place In crock pot.
In a small bowl, combine the apricot preserves, ginger powder, and pepper flakes. Mix well.
Pour sauce over chicken and set slow cooker.
Cook 6 hours on low, 3 hours on high.
Instant Pot Directions
Season the chicken with the salt, pepper and garlic powder.
Place In IP
In a small bowl, combine the apricot preserves, ginger powder, and pepper flakes. Mix well.
Pour over chicken and add one cup water
Place on manual high pressure for 20 minutes or 6 minutes per pound
Do a quick release and place in the broiler for 1-2 minutes to brown
Spicy Apricot Ginger Chicken
This delicious Spicy Apricot Ginger Chicken recipe is amazingly versatile. This recipe can either be baked, prepared in your slow cooker or prepared in your instant pot.
Ingredients
- 4 chicken legs
- 4 chicken thighs
- 1 c apricot preserves
- 2 tsp ginger powder, or 1 tsp grated ginger
- dash red pepper flakes, add more or less to your preference
- sprinkle garlic powder, again, more or less to your preference
- as desired salt and pepper, see note below
Instructions
- Preheat the oven to 350
- Season the chicken with the salt, pepper and garlic powder
- Place on a parchment lined baking sheet
- In a small bowl, combine the apricot preserves, ginger powder, and pepper flakes. Mix well.
- Brush on a light layer of the apricot glaze and place chicken in the oven
- Roast the chicken for 40 – 50 minutes or until golden
- From the 30 minute mark in the roasting time, brush more glaze on the chicken, on both sides. Baste every 10 minutes, getting more liberal with the amount you brush on with each basting time.
- If at the end of the cooking time, you’d like more “color” on your chicken, feel free to broil it for 2 – 3 m
Notes
The pepper I used was a tricolor peppercorn pepper, hence some of the red flakes in the peppered chicken process images. Regular pepper works just as fine of course.
