Summer is here and where I am it is dang hot! The last thing I want to do is to turn on the oven to cook a meal when it is over 100 degrees outside. That is why we have officially made it to salad season in our house! This Asian Chicken salad is one of our favorites! It is so simple to make and can easily feed a crowd.
Alternate between our Cobb Salad Trifle, Italian Sub Salad, Guacamole Salad, and this Asain Chicken Salad and for almost a whole week of not having to turn on the oven!
How to Make Asian Chicken Salad
- In a bowl or jar, mix the ingredients for the dressing until well blended.
- Prepare salads in individual bowls, in a layer trifle bowl, or in a large salad bowl.
- Toss the salad with the dressing prior to serving.
Tips Tricks and FAQs
- Using a rotisserie chicken makes this salad so easy. If you prefer you can always grill up your own chicken and add it as well.
- Chow mein noodles are another welcome addition to this salad if you want to add even more toppings.
- Feel free to add in other vegetables that you love. You can easily add cucumbers and cilantro for even more flavor.
- This recipe can easily be doubled or tripled.
- To create a vegetarian version of this salad, just omit the chicken.
Storage
Once you combine the salad with the dressing you will want to enjoy it right away. Storing it will make the salad pretty soggy with the addition of the dressing.
Make-Ahead
This is a great salad to prepare ahead of time! Make the dressing and keep it in an airtight container. Prep the salad excluding the peanuts and oranges and place it in the fridge. Right before enjoying add the peanuts, oranges, and the dressing and then toss.

Ingredients
- 5 to 6 cups romaine lettuce, coarsely chopped
- ½ cup thinly sliced purple cabbage
- ½ cup julienne sliced carrots
- ½ cup thinly sliced red bell pepper
- 1 cup mandarin oranges, drained well
- 1 cup dry roasted peanuts
- 3 cups rotisserie chicken, sliced or cubed
- For the dressing:
- ½ cup olive oil
- ¼ cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- ½ teaspoon sesame oil
- 1 clove garlic minced or ¼ teaspoon garlic powder
- Pinch crushed red pepper flakes
