Guacamole Salad combines tomatoes, bell pepper, black beans, onion, jalapeno, avocados that are then tossed with a lime dressing that helps pull all these delicious flavors together. This is the perfect salad to serve all summer long!

This time of year I love avocados! It is such a good fat to add to just about anything, that is why I am such a huge fan of this guacamole salad. It always reminds me of delicious cowboy caviar without corn. It is light refreshing and healthy.

How to Make Guacamole Salad 

  • In a small bowl or jar, mix the ingredients for the dressing.

  • In a large bowl, combine the ingredients for the salad EXCEPT the avocado. Pour the dressing over the salad and toss to combine.

  • Just before serving, fold in the avocado.

Tips Tricks and FAQs

  • If you want this to be a little spicier, you can easily add in another jalapeno. 
  • If you want to make this salad a little bigger, you can easily add in lettuce. 
  • This salad always reminds me of cowboy caviar without corn. Feel free to throw in some corn for even more flavor! 
  • Be sure to add in the avocado right before serving to prevent browning. 
  • This salad is typically served at room temperature.

Storage

This salad is best enjoyed right away. If you choose to save the leftovers, you will want to store them in an airtight container for up to 2 days. The avocado will brown while it is in the fridge. 

How do you make guacamole not turn brown?

Preventing browning of avocado almost seems unavoidable at times especially once you cut it. To help prevent the avocado from browning you can pour a layer of lemon juice on it and then wrap it tightly in plastic then place it in the fridge.

Can you eat brown avocado?

You can eat brown avocado, especially in this salad. You might find it to be a little bit mushier and the flavor a little off, but it is still safe to eat within a few days.

Guacamole Salad

Ingredients

  • 1-pint grape tomatoes, halved
  • 1 yellow bell pepper, seeded and diced
  • 1 (15 ounces) can of black beans, rinsed and drained
  • ½ cup red onion, diced fine
  • 2 jalapeno peppers, seeded and diced fine
  • 2 avocados, diced
  • For the dressing:
  • Juice of 1 lime
  • ¼ cup olive oil
  • 1 teaspoon salt
  • 2 cloves garlic, minced

Instructions

    1. In a small bowl or jar, mix the ingredients for the dressing. 
    2. In a large bowl, combine the ingredients for the salad EXCEPT the avocado. Pour the dressing over the salad and toss to combine.
