Italian Sub Salad is the perfect way to enjoy your Italian sub without the carbs as it combines Italian meats, cheese, banana peppers, onions, and olives that are then tossed in a homemade Italian dressing. This is a perfect low carb meal that will keep you satisfied every time.

One of my favorite things to eat during the summer is salads! They usually require no cooking, very little prep and they can be whipped up in minutes. I love that I don’t have to take much time away from spending time with the kids outside to make dinner! Some of my favorites are of course this Italian Sub Salad, my chicken salad, and my tomato and watermelon salad.
This Italian sub salad is one of my all-time favorites! I love that I can feel like I am enjoying a sub sandwich without all the carbs of the bread! It is a totally healthy way to enjoy a sub as long as you watch the amount of dressing you add! You will also love that this salad is prepped in less than 15 minutes!
What is Italian Sub Salad?
Italian Sub salad is a combination of different meats typically pepperoni, salami, and ham combined with other sub sandwich favorites like cheese, banana peppers, onions, and olives over a bed of lettuce with a homemade Italian dressing.
How to Make Italian Sub Salad
- In a bowl or jar, mix the ingredients for the dressing until well blended.
- Prepare salads in individual bowls, in a layer trifle bowl, or in a large salad bowl.
- Toss the salad with the dressing prior to serving.
Tips Tricks and Tips
- This salad easily feeds 4 to 6 people. You can double the recipe to feed a crowd!
- Feel free to omit a topping if you choose or add in extra olives if you are a fan! You can totally customize this however you like!
- If you find yourself without romaine lettuce you can substitute for iceberg lettuce as well.
- You want to be sure to cut your meat in bite-sized pieces so that you can easily enjoy it.
Storage
You can easily store this salad in an airtight container in the fridge overnight if you choose. If you do this, you don’t want to mix it all together (so the lettuce stays crisp) and you don’t want to add the dressing. When you are ready to serve, add the dressing.
Once you add the dressing it will not store well and is best to be enjoyed right away.
How long does this dressing last?
This dressing will last about 1 week when properly stored in the fridge.

- 5 to 6 cups romaine lettuce, coarsely chopped
- 1 cucumber, sliced thin
- 1 cup shredded Italian cheese blend
- 1 cup mini sliced pepperoni
- 1 cup diced salami
- 2 cups diced ham
- ½ cup sliced banana peppers
- ½ small red onion, sliced thin
- ½ cup green olives
- ½ cup sliced kalamata olives
- For the dressing:
- ½ cup olive oil
- ½ cup red wine or balsamic vinegar
- 1 tablespoon Italian seasoning
- ½ teaspoon garlic powder
Instructions
