In my recipe book at home, I have a page labeled “Quick dinners” On that page, I have some of our favorites listed like our Tortellini Pasta Salad with Pesto, our Instant Pot Shrimp Boil, and of course this pesto gnocchi recipe.
This gnocchi with pesto recipe is so quick to make, like boil the water and you are almost done quick. But that is not all I love about it!
I love that every bite is full of flavor and tender and is just so filling. Once you make this comfort dish you will make sure you always have all the ingredients on hand so you can make it at a moment’s notice any time you need a quick dinner idea.
How to Make Pesto Gnocchi
- To prepare this super delicious pesto gnocchi, start by gathering and measuring all the ingredients.
- First, take a pot filled with salty water (water needs to taste like seawater) and bring it to a boil.
- In the meantime, take a food processor or a high-speed blender and blend the basil leaves, pine nuts, parmesan cheese, garlic, salt & pepper, and extra virgin olive oil and run it until it turns into a creamy pesto.
- Next, add the gnocchi into the boiling water and wait for 2-3 minutes or until they start to float. Drain the water, add the gnocchi into a saucepan and pour the pesto making sure to toss them around until all the gnocchi is covered.
- Top up with basil leaves, pepper, pine nuts, and parmesan cheese.
- Enjoy!!

Storage
You will want to store your leftover pesto gnocchi in the fridge in an airtight container for up to 1 day.
Yes, you can make the pesto ahead of time. Once you prepare it place it in an airtight container with a layer of olive oil on the top. This will keep for up to 3 days in the fridge.
You can also freeze it as well. You will want to thaw it at room temperature or in the fridge overnight.
No, you do not need to thaw frozen gnocchi, just throw it in your boiling water.

- Pesto sauce for 1 cup *
- Fresh basil leaves: 2 1/2 cups
- Parmesan cheese: 2 Tablespoons
- Garlic Cloves: 3 roughly chopped
- Pinenuts: 2 Tablespoons
- Salt : 1 teaspoon
- Black pepper: 1/2 teaspoon
- Extra virgin olive oil : 1/4 cup
