Pesto Gnocchi is the perfect addition to meatless Monday! It is so easy to make and a family favorite! So grab your favorite gnocchi noodles and make this easy homemade pesto for a dinner ready to enjoy in about 20 minutes or less.

This gnocchi with pesto recipe is so quick to make, like boil the water and you are almost done quick. But that is not all I love about it!

I love that every bite is full of flavor and tender and is just so filling. Once you make this comfort dish you will make sure you always have all the ingredients on hand so you can make it at a moment’s notice any time you need a quick dinner idea.

How to Make Pesto Gnocchi

  • To prepare this super delicious pesto gnocchi, start by gathering and measuring all the ingredients.

  • First, take a pot filled with salty water (water needs to taste like seawater) and bring it to a boil.
  • In the meantime, take a food processor or a high-speed blender and blend the basil leaves, pine nuts, parmesan cheese, garlic, salt & pepper, and extra virgin olive oil and run it until it turns into a creamy pesto.

  • Next, add the gnocchi into the boiling water and wait for 2-3 minutes or until they start to float. Drain the water, add the gnocchi into a saucepan and pour the pesto making sure to toss them around until all the gnocchi is covered.

  • Top up with basil leaves, pepper, pine nuts, and parmesan cheese.

Tips Tricks and FAQs

  • Want to spice this dish up a bit? Add red pepper flakes. 
  • Add in sun-dried tomatoes if you want even more flavor. 
  • Make this a creamy pesto gnocchi by mixing the pesto with ricotta cheese. 
  • When it comes to the parmesan cheese I always suggest grating your own. It melts so much better than the pre-shredded cheese. 
  • This recipe shows you how to make homemade pesto, but if you prefer you can easily use your favorite store-bought pesto as well. 
  • Choose your favorite gnocchi when preparing this recipe.

Storage

You will want to store your leftover pesto gnocchi in the fridge in an airtight container for up to 1 day.

Can you make the pesto ahead of time?

Yes, you can make the pesto ahead of time. Once you prepare it place it in an airtight container with a layer of olive oil on the top. This will keep for up to 3 days in the fridge. 

You can also freeze it as well. You will want to thaw it at room temperature or in the fridge overnight.

Do you need to thaw frozen gnocchi?

No, you do not need to thaw frozen gnocchi, just throw it in your boiling water.

Ingredients

  • Gnocchi : 8-10 ounces
  • Pesto sauce for 1 cup *
  • Fresh basil leaves: 2 1/2 cups
  • Parmesan cheese: 2 Tablespoons
  • Garlic Cloves: 3 roughly chopped
  • Pinenuts: 2 Tablespoons
  • Salt : 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Extra virgin olive oil : 1/4 cup

* we used 3 -4 Tablespoons for the recipe, use according to your preference.
