I am all about easy desserts that take very little prep during the summer. That is why I am a huge fan of our S’mores dessert, our chocolate chip brownies, and of course these frozen cool whip rainbow sandwiches. I love these graham cracker whipped cream sandwiches because all it takes is about 5 minutes in the morning to prepare them and then I toss them in the freezer for us to enjoy later in the day!
No more cooking up delicious treats all day while the kids play, I get to actually spend time hanging out playing with my kids! With this super simple summer favorite dessert you can now too and it’s only 100 calories! That’s a huge win for everyone! Serve these poolside, at birthday parties, or at family game night!

- 12 graham crackers (whole)
- 1 tub whipped topping
- Sprinkles
How to Make Graham Cracker and Whipped Cream Sandwiches
- Break each graham cracker sheet into two squares
- Drop 3 about 3 Tbsp. of whipped topping onto the graham crackers and use the other side to press onto the top to create the sandwich
- Smooth the edges with a small spoon
- Dip each side of the sandwich into sprinkles to fully coat.
- Place into a dish and set in the freezer for at least 6 hours to fully freeze.

- Feel free to use your favorite brand and flavor of graham crackers. The chocolate ones are delicious with the cool whip! There is also vanilla and cinnamon.

- While you can enjoy these after 6 hours, for best results let these freeze overnight.
- If you want to save even more calories you can use the light version of cool whip, but I love the texture of the full fat cool whip.
- You can omit the sprinkles if you prefer.

Storage
Be sure to keep these in the freezer until you are ready to enjoy them. Once they are frozen be sure to keep them in an airtight container. They will last up to 1 week.
