It is a quick and easy mix and dump dish that combines ground beef, beans, rice, salsa, and spices that is then topped with cheese and other favorites like olives, tomatoes, and green onions. Mexican Ground Beef casserole is a household favorite. My kids love it because who doesn’t love Mexican food? And I love it because it is super inexpensive to make, easy, uses ingredients that I usually always have on hand and I can make it in the morning and bake it right before dinner. This is one dish you will want to serve on Taco Tuesday this week. I promise it will leave everyone with smiles on their faces and full bellies.

Mexican Ground Beef Casserole

Ingredients

2 pounds cooked and crumbled ground beef

1 (15 ounce) can of chili beans, undrained

4 cups cooked rice

1 (16 ounce) jar of salsa

2 cups sour cream

1 tablespoon chili powder

2 teaspoons ground cumin

Salt and black pepper, to taste

2 cups fiesta blend shredded cheese, divided

1 (2.25 ounce) can sliced black olives, drained

2 plum tomatoes, seeded and diced

3 green onions, sliced

How to Make Mexican Ground Beef Casserole

  • Preheat the oven to 350 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.
  • In the casserole dish, mix together the cooked beef, beans, rice, salsa, sour cream, and seasonings. Stir in 1 cup of cheese. Spread the top of the casserole evenly.
  • Top the casserole with the remaining cheese.
  • Bake for 30 minutes or until the cheese has melted and the edges bubble.

  • Top the casserole with tomatoes, black olives, and green onions. Add additional toppings if desired.

Tips Tricks and FAQs

  • You can flavor your ground beef with a taco seasoning pack if you prefer. 
  • I use a ground beef 80/20 or you can use a 90/10. You can also use a ground turkey. This will change the flavor a bit if you swap the protein. 
  • Swap out the chili beans for black beans or pinto beans. 
  • Use your favorite salsa when making this dish. 
  • Feel free to toss in 1 cup of thawed corn to this dish if you prefer. 
  • The tomatoes, onions, and olives are optional based on your family’s preferences.

Storage

Store your leftovers in the fridge, covered for up to 4 days.

Freezer

You can assemble and freeze this unbaked. Wrap it tightly in plastic wrap and then in foil. This will last for about 3 months. 

When you are ready to enjoy, thaw in the fridge and then bake.

Can I make this ahead of time? 

Yes, you can make this ahead of time. Follow the directions all the way up to baking it. Place it covered in the fridge and remove it when you are ready to bake. Bake as directed. 

You can also assemble it all together and bake and let it cool. This will keep in the fridge for up to 4 days. When you are ready to enjoy, warm it back up in the oven. If you are making it ahead add the olive, onions, and tomatoes right before you serve it.
