Instant Pot Mexican Rice is so easy to make! In fact, it is one of my favorite Mexican side dishes that I make to serve with my Instant Pot Mexican Pasta and Mexican Street Corn salad. It is tender and fluffy and tastes just like your favorite Mexican restaurant, perhaps even better.

How to Make Instant Pot Mexican Rice

  • Heat the electric pressure cooker using the saute function until hot. Add the olive oil and onion, stirring often and sauteing until the onion is tender. Stir in the garlic.

  • Add the broth to the electric pressure cooker and scrape the bottom with a wooden spoon to remove any cooked pieces. Stir in the seasonings and cancel the saute function.

  • Rinse the rice until the water runs clear. Stir the rice into the broth. Over the rice, dot with tomato paste. Do not stir.

  • Cover the electric pressure cooker and program it to manual or pressure cook for 7 minutes. Allow the pressure to release naturally.

  • Open the pressure cooker and stir to mix and fluff the rice.

Tips Tricks and FAQs

  • Be sure to not stir the tomato paste into the rice prior to cooking. This will cause you to get the burn notification on your Instant Pot. 
  • You don’t want to skip the rinsing of the rice. This adds a little water to the rice allowing it to cook properly. If you opt to skip this step, you may get burnt rice or undercooked rice. 
  • Add a pop of color to the dish by adding chopped tomatoes or cilantro to the top of this dish once cooked. 
  • Mexican rice is typically not spicy, but it is full of flavor. If you want to make this a spicy dish, add some cayenne pepper to the dish. You could even add chopped jalapenos. 
Yes, you can use brown rice in this Instant Pot Mexican rice recipe. You will want to add ¼ cup more water to the pot and cook your rice for 24 minutes. Let it naturally release for 10 minutes and then fluff your rice. 

Storage

You will want to store your leftover rice in the fridge in an airtight container. This will last up to 4 days.

Reheating

You will want to reheat your desired amount in the microwave. If it clumps together, stir in a little bit of water. Heat to your preferred temperature. 

Can I use brown rice?

Yes, you can use brown rice in this Instant Pot Mexican rice recipe. You will want to add ¼ cup more water to the pot and cook your rice for 24 minutes. Let it naturally release for 10 minutes and then fluff your rice.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 cups vegetable or chicken stock
  • 2 teaspoons salt
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • 2 cups long grain white rice
  • 3 tablespoons tomato paste

Instructions

  1. Heat the electric pressure cooker using the saute function until hot. Add the olive oil and onion, stirring often and sauteing until the onion is tender. Stir in the garlic.
  2. Add the broth to the electric pressure cooker and scrape the bottom with a wooden spoon to remove any cooked on pieces. Stir in the seasonings and cancel the saute function.
  3. Rinse the rice until the water runs clear. Stir the rice into the broth. Over the rice, dot with tomato paste. Do not stir.
  4. Cover the electric pressure cooker and program it to manual or pressure cook for 7 minutes. Allow the pressure to release naturally.
  5. Open the pressure cooker and stir to mix and fluff the rice.
