In our family we love fajitas! They are quick, easy and full of so much flavor! We love how versatile they are! We often eat fajitas at least once a week. We choose between sheet pan chicken fajitas, Instant pot sous vide steak fajitas, and these easy Instant Pot Chicken Fajitas. You will love these for so many reasons! It is an easy prep and dump recipe, it is ready in minutes, and you can easily swap out ingredients based on your family’s preferences. And if you are feeding a crowd this meal easily doubles or triples depending on the size of your Instant Pot.
How to Make Instant Pot Chicken Fajitas
- Put all of the ingredients into your instant pot. Give a little mix to combine the spices
- Close the lid, set to sealing.
- PC on HIGH for 7 minutes + do a Natural Release for 5 minutes. Then switch to a quick release.
- Remove the chicken and cut into smaller pieces.
- Combine back with your peppers and onions.
- Serve on tortillas with shredded cheese.
Tips Tricks and FAQs
- I love to use a variety of different color peppers, if you prefer you can stick to any one color.
- You can add more onions or omit them based on your family’s preferences.
- Be sure to cut your chicken all about the same size to ensure it cooks evenly.
- The water or broth is a key component in this dish, be sure you add it so that the Instant Pot can come to pressure properly.
Storage
You will want to store your leftover chicken fajitas in the fridge in an airtight container. This will last up to 4 days.
Can you prepare Instant Pot Chicken Fajitas ahead of time?
Yes! You can prep these ahead of time. I like to slice everything up and add the seasoning and then place it all in a freezer-safe bag (excluding the liquid). I then place it in the freezer for up to 3 months.
When we are ready to enjoy, I pull it out of the freezer a few hours early and then dump it into the Instant Pot and cook as directed in the recipe. You will need to add about 5 extra minutes to the cooking time to account for it being frozen.
What can I serve with Instant Pot Chicken Fajitas?
Serve your chicken fajita mixture in flour tortillas. Top with cheese and sour cream, salsa and guacamole.
If you want to make this a heartier meal, serve with Instant Pot Chipotle’s Cilantro Lime rice and Instant Pot refried beans on the side.

Ingredients
- 2 lbs boneless, skinless chicken strips or breasts sliced
- 1/2 cup water or chicken broth
- 1 red bell pepper; cut into strips
- 1 green bell pepper; cut into strips
- 1 yellow bell pepper; cut into strips
- 1 white onion; sliced
- 1 1/2 TBSP Fajita Seasoning
- Ingredients not to be included in the instant pot
- 1 dozen tortillas
- 2 cups cheese for topping
