- 2 cups long grain white rice
- 2 cups water
- 1 Tsp Salt
- ½ cup fresh cilantro, chopped
- Zest from 1 lime
- 2 Tbsp fresh squeezed lime juice
- 4 TBSP Butter
Instructions
- Pour water, rice & salt into the instant pot.
- Select Low Pressure or the Rice Button.
- Cook for 12 minutes on low pressure.
- Do a quick release.
- Fluff rice, add in lime juice, zest, butter & cilantro. Give rice good stir.
- Serve or freeze once cooled.

*2 cups of rice was enough for 3 freezer bags of rice for a dinner side sized portion for 2.

To FREEZE: Place cooled rice into freezer bag. Freeze
To REHEAT: Remove bag from freezer and sit on the counter while preparing dinner. (If in a rush, you can run the bag over warm water to loosen the frozen rice from the Ziploc) Remove rice from bag and place in a microwavable bowl. Add TBSP of water, cover with plastic wrap. What if you have to cook on stove since I do not own a slow cooker
Hi…was reading your recipe and directions. You might want to go back and edit the directions. Are you assuming EVERYONE will know to put the water in with the rice? A person brand new to IP’s will follow your directions to the T and then wonder what went wrong. Other then that, I haven’t had Chipotle’s cilantro lime rice in ages so this will be on my to do list. 🙂

@Lisa, I just made this using Trader Joe’s Brown Jasmine Rice and it came out perfectly. 1 to 1 ratio of rice to water, 19 minutes on high pressure in the IP. I did 5 minutes natural release, then quick release.
What kind of stock do you use instead of water? Above it’s says you recommend using stock over water. Thanks! Can’t wait to give this a try!

In your information you state that for the true Chipotle flavor that you prefer stock over plain water. In the ingredient it lists just water. What type of stock do you suggest… chicken, beef, vegtable?
I am so sorry, it was written a bit confusing. If you would like to use stock, I would use either chicken stock or vegetable. Water really does work fine for this recipe, but stock will give it that extra special touch.

We tried this recipe this evening and it was really good. The rice was kinda firm so next time I will cook the rice longer.
