In our house, we love a good breakfast, and this Breakfast skillet is one of our favorites. It is savory, hearty, and satisfying and the perfect breakfast to encourage everyone to sit around the table and enjoy together.

Breakfast Skillet

Ingredients

  • 10 ounces uncooked seasoned hash browns, or 1 average potato, peeled and shredded *
  • 3 pieces of uncooked bacon, cut into bite-size pieces
  • 1/2 cup chopped sweet onion or green onion
  • 1 1/2 cups grated cheese
  • 1/2- pound breakfast sausage, cooked and drained well
  • 4 ounces cream cheese, softened
  • 6 large eggs
  • 1 cup milk, or half & half, for a creamier texture

How to Make Breakfast Skillet

  • Heat oven to 375 F. Grease a 10-inch (2-inch deep) cast-iron skillet. 
  • Place hash browns in the bottom of the skillet. Cover with uncooked bacon. Bake uncovered for 30 minutes. 

  • Remove the skillet from the oven and sprinkle with chopped onion. Cover with cheese. Sprinkle with cooked sausage. 

  • In a medium bowl, beat the cream cheese until smooth. Add one egg and beat until incorporated. Add remaining eggs and beat until smooth. 

  • Add milk to egg mixture and beat until combined. Pour into skillet. 

  • Reduce oven to 350 F. Place skillet back in the oven and bake for approximately 50 minutes, or until golden brown.

  • Allow the skillet to sit for 10 minutes before serving.

Tips Tricks, and FAQs

  • When making this be sure you use a large skillet. You don’t want the hash browns to be all crowded together. If you don’t have a large skillet you may want to reduce the number of hashbrowns you add to the pan. 
  • I love using prepackaged hashbrowns because they are easy, but you can grate your own potato as well. If you choose to do this, grate it right before making the dish to prevent browning. 
  • Use your favorite variety of cheese for your breakfast skillet. 
  • You can swap out the sausage for more bacon or ground beef if you prefer, or omit it completely. 
  • To save time, you can use precooked sausage. 
  • If you feel like you don’t have enough bacon grease to prevent sticking add 1 Tablespoon of oil.

Storage

This is best enjoyed right away. If you do choose to store it. Place it in the fridge in an airtight container for up to 2 days. It will get soggy as it sits in the fridge. 

Can I make this ahead of time?

Yes, you can prepare your breakfast skillet ahead of time. You can chop the onion and place it in a plastic bag in the fridge, grate the cheese, cook the sausage and then store it in the fridge. The next morning, just pull out the ingredients and prepare your breakfast skillet and bake.
