From the moment my kids wake up in the summer until the moment they go to bed, they are begging for popsicles. Thankfully I never feel guilty giving them these Rainbow Fruit popsicles for breakfast, lunch, and dinner! These popsicles are filled with so much goodness, delicious fruit, and greek yogurt with no added sugar!

How to make rainbow popsicles
- In a blender or food processor, puree each individual layer and spoon into the popsicle mold.
- Cover and push popsicle sticks into the mold.
- Freeze overnight or until completely frozen.
- To remove, dip the popsicle mold into warm water for 3 to 5 seconds before pushing the popsicles up from the bottom of the silicone mold.
Tips Tricks and FAQs
- If desired, you can omit any of the layers and use double of another layer.
- This recipe is easily doubled or tripled.
- It will be easiest to use a spoon to add the different layers to the mold. They will blend a bit, but that is one of the beauties of rainbow popsicles.
- Be sure you use room temperature water to release the popsicles from the mold.
Storage
Store your rainbow popsicles individually wrapped in plastic and then placed in a freezer-safe bag once they have frozen overnight. This allows you to continue to make popsicles with the mold while still enjoying your batch. These will last in the freezer for 2 months.
Are rainbow popsicles quick to make?
Rainbow popsicles do take more time to make because you are mixing small layered batches at a time. If you are trying to save time, I always grab a few popsicle molds and make several batches at once.
Can I use any kind of fruit?
Frozen fruit does work best because it helps thicken the layers. If you are using canned fruit or fresh fruit, I would freeze it before using it to have the same thickness.

- For the purple layer:
- ¼ cup frozen blueberries
- ¼ cup frozen raspberries
- ¼ cup frozen sliced banana
- ¼ cup vanilla greek yogurt
- 2 to 3 tablespoons water
- For the blue layer:
- ½ cup frozen blueberries
- ¼ cup frozen sliced banana
- ¼ cup vanilla greek yogurt
- 2 to 3 tablespoons water
- For the green layer:
- ¼ cup frozen spinach
- ¼ cup frozen pineapple
- ¼ cup frozen sliced banana
- ¼ cup vanilla greek yogurt
- 2 to 3 tablespoons water
- For the red layer:
- ¼ cup frozen strawberries
- ¼ cup frozen raspberries
- ¼ cup frozen sliced banana
- ¼ cup vanilla greek yogurt
- 2 to 3 tablespoons water
- For the orange layer:
- ½ cup frozen mango
- ¼ cup frozen peaches
- ¼ cup vanilla greek yogurt
- 2 to 3 tablespoons water
- For the yellow layer:
- ¼ cup frozen pineapple
- ¼ cup frozen peaches
- ¼ cup frozen sliced banana
