Strawberry Mojito
The other day we made mojitos with a lime simple syrup and it was a huge hit! Well, this week I just happened to be walking past the strawberries at the grocery store and they looked so delicious I knew exactly what I needed them for, to make strawberry mojitos with a homemade strawberry simple syrup.
Let me tell you if you have yet to try these, now is the time. The strawberry, lime, and mint flavors in this drink are so flavorful and light, and scream summer is here!

What will I need to make Strawberry mojitos?
You will need the following ingredients:
- Ice
- Strawberries
- Sugar
- Water
- Light rum
- Lime juice
- Mint leaves
- Limes
You will need the following supplies:
- Measuring cups, or jigger
- Tall glass
- Small saucepan
- Wooden spoon or stir utensil
- Muddler (spoon)
How to Make a Strawberry Mojito
- To make the simple syrup, combine the water, strawberries, and sugar in a small saucepan. Bring to a low simmer. Stir until all the sugar is dissolved.
- Remove from heat and set aside. Allow the simple syrup to cool completely. This can be done a few days in advance and stored in the refrigerator.
- To Make Mojito: add 3-5 mint leaves and 1 chopped strawberry to the bottom of a tall glass, and muddle the strawberry and leaves.
- Add ice to a tall glass
- Add lime juice, strawberry simple syrup, and rum to the glass.
- Top with sparkling water.
- Stir to combine
- Top with extra mint leaves and a few slices of lime and strawberries
- Sit back and enjoy!
Tips Tricks and FAQs
- The recipe calls for plain sparkling water, but feel free to get creative. I have tried lime, cucumber, berry, and lemon and they are all delicious.
- Not a fan of rum? You can use vodka or tequila.
- This recipe is made with a strawberry simple syrup. Feel free to use a plain simple syrup or a lime simple syrup if you prefer.
- You can buy simple syrup from the store if you don’t want to make your own to save time.
- If you want to make a large batch to serve at a gathering you can mix the rum, strawberry simple syrup, and lime juice in a pitcher. When you get ready to pour individual drinks, then add in the sparkling water.
- If you don’t have a muddler you can use a spoon, the bottom of a wooden spoon, a mortar and pestle, or a wooden skewer.
Storage
You will want to enjoy this drink right away once the sparkling water is added
Yes, the strawberry simple syrup will keep for up to two weeks when stored in the fridge in an airtight container.
If you prefer to make a big batch ahead of time, you will want to add the rum, strawberry simple syrup, and lime juice and then place it in the fridge until you are ready to serve.
Right before serving add in the sparkling water.
Of course, just leave out the alcohol.
