Pineapple Mojito
Reaching for fresh pineapple is really going to transform your drink. There is nothing like a fresh pineapple drink in my opinion. The mint paired with it, just throws this drink into a whole new world!
How to Make
Step 1: Start by adding your pineapple, mint, lime juice and sugar into our mortar and pestle. You will want to smash the ingredients together.
The pineapple you want to smash until it breaks down and is creamy, and the mint leaves will get bruised.
Step 2: You will add your pineapple mixture into a pitcher or even a mason jar. Pour in your pineapple juice, club soda, and the rum.
Step 3: Stir gently to incorporate. You can taste and if you feel needs to be sweeter add more sugar and stir.
Step 4: Fill cups with ice, and then pour your mixture into the cups, and sip and enjoy!
Can I Make This Non-Alcoholic
You can absolutely make this pineapple lime mojito non-alcoholic. I just replaced the rum with a ginger ale or lemon lime soda. Then pour over ice and serve just the same!
You could also swap with more pineapple juice or club soda if you wanted or even sparkling water.

How To Store
This mojito is best when served fresh. I tend to make it glass by glass so you get the fresh flavors in every sip. If you do have leftovers you can easily place the leftovers in the fridge.
It can store for a day or two in the fridge. You will find the flavors change a bit as it sits in the fridge. So just give a good stir and then pour in the rum and such. I tend to leave the alcohol out until right before I serve it.
Dress Up Your Glass
Slice wedges of limes, or even pineapple to hook onto the side of your glasses. Then serve up a colorful and delicious alcoholic drink.
You could even dip your cup in a colored sugar like a margarita to add even more color and sweetness if you would like.
Can I Make A Bigger Batch For A Crowd
Want to serve this tropical drink as a party drink? Go right ahead and make this into a larger batch. Just double up the recipe to as large as you would like. Pour into a pitcher and then pour into glasses with ice and serve!

Ingredients
- ½ cup of fresh pineapple, cut into chunks
- 1 tablespoon of sugar, or as desired
- 6 mint leaves, chopped
- ½ lime, juiced
- 2 cups of pineapple juice
- 2 cups of club soda
- 1-2 ounces of rum
- ice
Instructions
- In a large mortar and pestle, add in pineapple, sugar, mint leaves, and lime juice. Gently smash ingredients together with the pestle, until pineapple is creamy and mint leaves have bruised.
- Add pineapple mix to a small pitcher or very large mason jar.
- Next add in pineapple juice, club soda, and rum. Stir together gently. Taste and add more sugar if desired.
- Pour over 2 ice filled cups.

Serves 2-4 (depending on size of drink desired)
Notes: For a fun twist, add in a spear of pineapple and a few thin slices of lime to your cups!
