This summer we are having all the get togethers. So I am always looking for different dishes to wow my guests! Earlier this summer we wowed them with my Watermelon Sherbet and my Stuffed Mushrooms in the Air Fryer, but this weekend they all fell in love with this Frito Corn salad recipe.
This salad is one of a kind and so easy to make. It comes together in minutes and you can enjoy it by the spoonful or you can dip your Fritos in it for a nice crunchy bite! No matter how you enjoy it, you will love the creaminess mixed with the flavor and the crunch!
What do I need to get started?
- Whole kernel corn – canned or frozen
- Southwest corn – any corn that has red and green peppers mixed in
- Mayonnaise – your favorite brand
- Onion – red, yellow, or white
- Jalapeno – if you don’t like it spicy, use green pepper instead
- Bacon bits – you can cook and crumble bacon or buy real bacon bits
- Cheddar cheese – use any cheese you like
- Smoked paprika
- Corn chips – cheddar, BBQ, chili, or plain
How to Make Frito Corn Pie
- Combine both types of corn, mayonnaise, onion, jalapeno, bacon bits, cheddar cheese, and paprika together in a bowl.
- Crush half of the corn chips and stir into the corn right before serving. Top with remaining chips.
Tips Tricks and FAQs
- Be sure to stir in some crushed corn chips right before you serve this dish. This helps them not be soggy. Add some bigger corn chips to the top of your salad.
- If you can’t find any southwest corn, you can use 2 cans of corn and add some diced red and green peppers.
- You will want to drain the corn prior to adding it to the salad. This helps prevent the salad from being watery.
- Add in as many Fritos as you would like to the salad.
- You can use any variety of Fritos, they have cheddar, BBQ, chili, or plain. My personal favorite is the Chili Cheese Fritos with this dish, yum!
