Air Fryer Corn Ribs with Garlic Aioli

These corn ribs are my favorite alternative to corn on the cob or Mexican Street Corn – all the amazing flavors from seasonal corn with none of the hassle. This is the perfect side dish for any cookout or summertime party!

And to go with this corn recipe, I made the most amazing Garlic Aioli you’ll ever taste. Delicious, smoky, and all the garlic flavor for dipping this corn, and it comes together in the few minutes your corn is air frying!

What do I need to get started?

For the corn ribs:

  • Corn on the cob, husked. I will teach you how to safely cut the corn down below!
  • BBQ seasoning. You can go store bought for a super easy recipe, or make it homemade.
  • Olive oil.
  • Parsley for garnish.
  • And, as always with the air fryer, non-stick spray for the air fryer basket.

For the garlic aioli:

  • Mayonnaise.
  • Olive oil.
  • Liquid Smoke. This is how we achieve that beautiful smoky flavor without dragging out a smoker.
  • Freshly squeezed lemon juice.
  • Minced garlic.

How to make Air Fryer Corn Ribs

I chose to make air fried corn ribs, rather than oven-baked because this is a summer recipe and the last thing you want to do on a hot summer day is turn on that oven! And in the air fryer, this meal is ready in under 30 minutes. So to start, you want to preheat your air fryer to 400. 

To start with cutting the corn: carefully cut both ends of each husked corn on the cob and quarter them. Use a very sharp knife and do this carefully. Do this until you have 12 corn ribs.

Whisk together the BBQ seasoning and olive oil. Toss the ribs into the mixture to coat.

Add the seasoned corn ribs to the preheated air fryer and cook for 8-10 minutes. The corn should be tender at this point and beautifully charred. You do not need to flip these halfway through cooking.

Remove the corn from the air fryer using tongs, and place it on a serving dish. Garnish with fresh chopped parsley.

How to make Smoky Garlic Aioli

While the corn is air frying, you can get started on the super easy Smoky Garlic Aioli!

This all comes together in one step. Put all aioli ingredients in a small bowl and just mix them together until it’s well combined. Cover and refrigerate until the corn is ready to serve.

How to store Corn Ribs

As much as I love eating corn, I recommend only making as much as you need for that day – it is best eaten immediately and can easily be made again if you want it the next day!

You can store the ribs in an airtight container in the fridge. I do not recommend freezing the corn, as it will become dry and grainy.

How to store Garlic Aioli

Garlic aioli can be stored in the fridge for up to 7 days in an airtight container.

Tips and Tricks

  • If you don’t have an air fryer, this can easily be made on the grill! Follow all the steps exactly until you get to the air fryer, and simply cook on the grill instead.
  • The corn is best served drizzled with the aioli, topped with parsley, and served with lemon wedges for a bit of acidity.
  • To reheat the corn ribs, air fryer again at 400 for 3-5 minutes.

Ingredients

  • For the smoky garlic aioli:
  • ¾ cup mayonnaise
  • 2 Tbsp olive oil
  • ¼ tsp liquid smoke
  • Juice from ½ a lemon
  • 3 cloves minced garlic
  • For the corn ribs:
  • 3 corn on the cob, husked
  • 3 Tbsp BBQ seasoning
  • 3 Tbsp olive oil
  • Parsley for garnish

Instructions

    For the smoky garlic aioli:

    In a small mixing bowl, whisk together all the aioli ingredients. Cover and refrigerate until the corn is ready to serve.

    For the corn ribs:

    Carefully cut both ends of each husked corn on the cob and quarter them until you have 12 corn “ribs” and set them aside.

    In a large mixing bowl, whisk together the BBQ seasoning and the olive oil. Add the corn “ribs” and toss to coat.

    Preheat the air fryer to 400℉. Add the seasoned corn “ribs” to the air fryer basket and cook for 8-10 minutes or until tender and slightly charred. No need to flip halfway through cooking.

    Garnish with some fresh chopped parsley and serve hot with the garlic aioli.
