How to Make Macaroni Salad

  • In a large bowl, whisk together the mayonnaise, vinegar, sugar, mustard, salt, and black pepper until well blended.

  • To the bowl, add the remaining ingredients and toss to combine. 

  • Cover and refrigerate until ready to serve.

Tips Tricks and FAQs

  • While this recipe doesn’t call for hard boiled eggs, it is a great addition if you want to add some protein to this salad. 
  • Love cheese? Add in some small blocks of cheddar cheese as well. 
  • You can omit any of the vegetables that your family does not love. 
  • When it comes to the dressing you want it to coat the noodles, but not have them soaking in dressing. My philosophy is you can always add more, but it is really hard to remove it once it is added.

You will want to store your macaroni salad in an airtight container in the fridge for up to 4 days.

How long can macaroni salad sit out for?

Since the dressing is mayonnaise based you do not want to have it sit out for a long period of time. Try to not keep it at room temperature or the heat for longer than an hour before placing it back in the fridge. 

Can you make macaroni salad ahead of time?

Yes! You can make this salad up to two days in advance. Just be sure to keep it covered in the fridge until you are ready to serve. If you find that it has dried out a bit, you can add a little bit more mayonnaise to freshen it up a bit.

Ingredients

  • 1 cup mayonnaise
  • ¼ cup distilled white vinegar
  • ⅔ cup sugar
  • 3 tablespoons prepared mustard
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 (16 ounce) package of elbow macaroni, cooked according to package directions, drained, and under cold water
  • 1 onion, diced
  • 2 stalks of celery, diced
  • 1 green bell pepper, seeded and diced
  • ½ cup grated carrot
  • 2 tablespoons diced pimento peppers

Instructions

    In a large bowl, whisk together the mayonnaise, vinegar, sugar, mustard, salt, and black pepper until well blended.
    To the bowl, add the remaining ingredients and toss to combine.
    Cover and refrigerate until ready to serve.
