There is nothing better than a good macaroni salad to accompany any bbq and I have to say this is one of my favorite versions of macaroni salad.
You will fall in love with the sweet tangy mayonnaise dressing that the macaroni noodles and vegetables are tossed in. Once you make this you will find yourself making it for all your gatherings all summer long. The best news about this salad is that you can make it ahead of time to enjoy it later!

How to Make Macaroni Salad
- In a large bowl, whisk together the mayonnaise, vinegar, sugar, mustard, salt, and black pepper until well blended.
- To the bowl, add the remaining ingredients and toss to combine.
- Cover and refrigerate until ready to serve.
Tips Tricks and FAQs
- While this recipe doesn’t call for hard boiled eggs, it is a great addition if you want to add some protein to this salad.
- Love cheese? Add in some small blocks of cheddar cheese as well.
- You can omit any of the vegetables that your family does not love.
- When it comes to the dressing you want it to coat the noodles, but not have them soaking in dressing. My philosophy is you can always add more, but it is really hard to remove it once it is added.
Storage
You will want to store your macaroni salad in an airtight container in the fridge for up to 4 days.
Since the dressing is mayonnaise based you do not want to have it sit out for a long period of time. Try to not keep it at room temperature or the heat for longer than an hour before placing it back in the fridge.
Yes! You can make this salad up to two days in advance. Just be sure to keep it covered in the fridge until you are ready to serve. If you find that it has dried out a bit, you can add a little bit more mayonnaise to freshen it up a bit.

Ingredients
- 1 cup mayonnaise
- ¼ cup distilled white vinegar
- ⅔ cup sugar
- 3 tablespoons prepared mustard
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- 1 (16 ounce) package of elbow macaroni, cooked according to package directions, drained, and under cold water
- 1 onion, diced
- 2 stalks of celery, diced
- 1 green bell pepper, seeded and diced
- ½ cup grated carrot
- 2 tablespoons diced pimento peppers
Instructions
