Crockpot Tortellini Soup
I love combining pasta dishes and soups. Some of my absolute favorites are Instant Pot Spaghetti and Meatball Soup, Instant Pot Lasagna Soup, and of course this Crockpot Tortellini Soup with Sausage.
When you combine pasta and soup it creates such a hearty and comforting dish that no one can ever pass up. It leaves everyone happy and their bellies quite content.
This soup is so easy to make and the flavors meld together so well for this easy weeknight dish that you can prep and then come back and enjoy a few hours later as a family.
Ingredients
- 1 (16 oz) Bag Frozen Cheese Tortellini
- 1 Small Bag of Frozen Chopped Spinach or 10 oz Frozen Chopped Spinach Block
- 2 (14.5 oz) Cans Diced Tomatoes (not drained)
- 4 Cups Chicken Broth
- 1 (8 oz) Block of Cream Cheese, cut into chunks
- 1 LB Italian Sausage, sweet or hot. Cooked and crumbled (optional)
- ¼ Cup Parmesan Cheese, grated (optional)
How to make crockpot tortellini soup
- Add your frozen tortellini, frozen spinach (if you would like to use fresh spinach, you will add it at the end, you will see in the pictures when to add it in), diced tomatoes, chicken broth, and cream cheese to your pot. If you are using sausage add it as well.
- Cook on HIGH for 2 ½ – 3 hours. You want to be careful you do not overcook your tortellini.
- Once cooked, add fresh spinach if using fresh, and allow to cook for about 10-15 minutes to soften a bit. Give a good sprinkle of Parmesan Cheese and serve.
- Enjoy!

- This soup can be served with or without sausage.
- If you want a little bit more flavor and spice use an Italian spicy sausage.
- Add veggies! This recipe calls for spinach and tomatoes, but feel free to add other vegetables into the soup such as onions, and carrots.
- If you want a healthier version of this soup you can substitute the sausage for a ground turkey.
- Swap out Spinach. If you love Kale, swap out the spinach for a handful of kale for another great variation you will love.
- If you would like to add a creamy texture to the soup add about ¼ cup of cream to the soup about 15 minutes prior to serving.
Yes, you can easily make this soup vegetarian. To do this you will want to leave out the sausage and use a vegetable broth instead of chicken broth. If you want to add protein to the soup you can easily add a can of beans. Just be sure to drain and rinse them before adding.

When you reheat your Tortellini soup you might find that you need to add a little bit more chicken broth. The longer tortellini sits in liquid the more they soak up causing the broth to deplete from the soup.

Instructions
