Y’all know how much we love to recreate our favorite restaurant dishes at home like our Air Fryer Copycat Chick-Fil-A Chicken Nuggets or our KFC Coleslaw recipe. But the other day we were craving something a bit more healthy that was loaded with vegetables, so I decided to whip up this yummy Pad Thai recipe in the Instant Pot.
This Instant Pot Chicken Pad Thai is so easy to make and is ready in minutes. Although it is not super authentic it still tastes delicious, is packed full of flavor, and is a healthy option to eat at home which we are trying to do a little more often this year!
How to make Instant Pot Chicken Pad Thai
- Turn pot to saute. Add in olive oil and allow to get warm.
- Add in diced chicken and garlic. Saute for several minutes.
- Add in the soy sauce & pad thai sauce.
- Add in the carrots and green onions.
- Put the lid.
- PC for 4 minutes + 5 minutes Natural Release.
- Release the remaining pressure & remove your lid.
- Add in the peppers. Stir to combine & place the lid back on. Allow it to sit for 3 minutes giving the peppers a chance to cook.
- Remove the lid. Add in cooked rice noodles. Toss carefully to combine all of the ingredients.
- Serve garnished with chopped peanuts and green onion tips.
Tips Tricks and FAQs
- You can choose any type of peanuts that you have on hand. I usually use a roasted or an unsalted variety.
- Get creative! You can easily add more vegetables to this recipe.
- Swap out the protein. Try making this with shrimp instead of chicken. To do this just be sure your shrimp are frozen to prevent over-cooking them.
- For a little more flavor add a touch of salt and a squeeze of lime. It will add so much flavor to this dish.
- Don’t forget to let your pot naturally release for 5 minutes. This results in a much more tender and juicy meal.

Reheating
To reheat your pad thai you will want to place it in a microwave safe bowl for 1-2 minutes. You might want to sprinkle some water on the top to help it not be as dry.

- 4 Green Onions, diced (white & light green parts only, use the green tips for garnish)
- 8 oz Rice Noodles, cooked according to packages directions
- ⅓ Cup Peanuts, chopped
