Delicious Instant Pot Starbucks Copycat Bacon Gruyere Egg Bites For A Quick Easy Breakfast
Instant Pot Bacon Gruyere Egg Bites are light fluffy and delicious as you combine eggs, cottage cheese, gruyere cheese, and crumbled bacon to create a quick and easy breakfast that is packed with protein and is ready in minutes. If you have ever been to Starbucks there is a good chance that you have had their Bacon Gruyere Egg Bites. They are so delicious and the perfect addition to your favorite coffee drink. The only problem is that Starbucks can get a little expensive and time consuming, so I decided it was time to create a copycat bacon gruyere eggbite that I can have whenever I feel like it, which is pretty much every single day! Pair it with a whipped coffee and you are sure to have a winning combination.

How to make Copycat Bacon Gruyere Egg Bites
- Prepare the electric pressure cooker by adding 1 cup water and the trivet.
- Place all ingredients EXCEPT the bacon into a blender in the order listed. Process the batter until the batter is smooth.
- Pour batter into the egg bite mold, filling each cup halfway. Top with bacon.
- Cover the mold with the lid or foil (if you forget, it’s not a problem, you will just have a little moisture on top) and carefully lower it into the electric pressure cooker.
- Close the pressure cooker and set the valve to sealing. Program using the “manual” or “pressure cook” function for 10 minutes. When the cooking cycle is complete, allow the pressure to naturally release for 10 minutes before performing a quick release to remove the remaining pressure.
- Carefully remove the silicone mold. The egg bites will have puffed up but will deflate slowly as they cool. Pop the egg bites from the silicone mold and serve.
Makes about 14 egg bites.
Tips Tricks and FAQs
- These are totally customizable! Just as long as you keep your egg to cheese ratio the same you will create delicious easy to make egg bites.
- If you would rather use cheddar cheese rather than Gruyere you can easily do this!
- I like to add in extra veggies as well. Spinach or even sun dried tomatoes are a delicious addition!
Storage
The great thing about these egg bites is that they store so nicely and are perfect for meal prepping!
Fridge
Make these early in the week and and then store in an airtight container in the fridge. When you are ready to enjoy, just pop one in the microwave for 30 seconds.
Freezer
These freeze exceptionally well! You will want to freeze them individually first. Place a piece of parchment paper on a tray and then set the egg bites on top and place in the freezer until frozen. Once frozen add them to a freezer-safe bag. When you are ready to enjoy, just remove from the freezer and heat up in the microwave for about 1 ½ minute. I would check it and then cook a bit longer if needed.
Can you stack egg bite molds in the Instant Pot?
Yes, you can! Place your trivet into your inner pot. Pour 1 cup of water into your pot. Place your egg bites mold on top of your trivet. Place two rings from mason jars to act as a spacer, so you can place another egg bite mold on top. (Here is an example while making my instant pot pumpkin muffin bites)

- 1 cup shredded gruyere cheese
- Salt and black pepper, as desired
