How to Make Peanut Butter Balls
Step 1:
Line cookie sheet with parchment paper. In a large bowl, combine cereal and confectioners sugar. In a medium bowl, add peanut butter and butter. Cover with a paper towel. Melt in microwave for 30 seconds. Stir and continue to heat another 10-30 seconds or until the butter has melted.
Step 2:
Pour peanut butter mixture into cereal and sugar mixture.
Stir until all ingredients have combined. Allow mixture to cool slightly before rolling. Using a cookie scoop and your hands, roll the mixture into 2 inch balls and place on a cookie sheet.
Chill in the refrigerator for 15 minutes or longer.
Step 3:
Melt chocolate chips in a microwave-safe bowl in 30-second increments. Once the chocolate is mostly melted, heat in 15-second increments until smooth. Add 2-4 teaspoons of vegetable oil to thin chocolate slightly if desired. This will allow for easier coating when dipping balls.
Step 4:
Once chilled, dip balls into melted chocolate to coat. Place back onto cookie sheet. Add sprinkles/toppings and chill to harden for at least 15 minutes.
Store refrigerated for up to 2 weeks.
