Summer is in full effect, which means it is definitely time to be enjoying all the fruity cocktails outside next to the pool. It seems like this summer I am all about everything pineapple which means I am loving Captain and Pineapple Juice! This is a delicious combination of Captain Morgan and Pineapple juice that is then topped with pineapple leaves and a cherry for a super festive look. If I close my eyes, I easily am able to imagine myself at the beach as I sip on this delicious new fruity cocktail!

How to make Captain and Pineapple Cocktail

Fill a glass with ice cubes.

Pour in 1 shot of Captain Morgan.

Top with pineapple juice.

Garnish with pineapple leaves & cherries.

Tips Tricks and FAQs

• If you want to make this a frozen drink, blend the ingredients together including the ice. Top with whip cream if you prefer. 
• You can omit the pineapple leaves if you choose and just add a slice of pineapple. 
• You can easily make a big batch of this drink. Mix 46 ounces of pineapple to 2 cups of spiced rum. Place in the fridge to chill.

Storage

To store any leftovers you will want to store it in a container in the fridge. This will last about 2 days. Be sure you keep it out of reach of the kids. 

Can I Make this ahead?

Yes! You can easily make a big batch ahead of time. Just mix Captain Morgan and Pineapple juice and place in the fridge up to 12 hours before serving. When you are ready to serve, add ice to individual glasses and pour over the ice after stirring. Add the garnish and serve.
