How to Make Barbecue Meatloaf
- Preheat your oven to 350°F (175°C). Prepare a 9×13 baking dish with nonstick cooking spray.
- In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, milk, 1/4 cup barbecue sauce, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix the ingredients well until everything is evenly combined.
- Form the meat mixture into a loaf shape and place it in the baking dish. Make sure the loaf is compact and evenly shaped.
- Place the meatloaf in the preheated oven and bake for about 45 minutes to 1 hour, or until the internal temperature reaches 160°F (70°C). The cooking time may vary depending on your oven and the thickness of the meatloaf.
- In a small bowl, whisk together 1/2 cup barbecue sauce, brown sugar, and apple cider vinegar until smooth.
- About 10-15 minutes before the meatloaf is done, brush the barbecue glaze over the top. This will create a nice caramelized finish.
- Once the meatloaf is cooked through, remove it from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute and makes for easier slicing.
Tips Tricks and FAQs
- Feel free to customize your Barbecue meatloaf with all your favorite flavors like chopped bell peppers, shredded cheese, or chopped herbs. Add these to your meat mixtures for delicious flavors and textures.
- When choosing your ground beef be sure you choose a meat with at least 15% fat. This allows for a nice juicy meatloaf. If you choose a healthier meat it tends to not have as much flavor and be dry.
- Be sure to apply your barbecue sauce glaze liberally to the top of your meatloaf.
- Be sure to not overmix your meat mixture. Overmixing can lead to a tough meatloaf. Mix just enough to combine all the ingredients together.
- Use your meat thermometer to test if the meatloaf is done. It needs to reach 160°F (70°C).
- Be sure to let your meatloaf rest for at least 10 minutes after removing it from the oven. This allows the juices to redistribute throughout the meatloaf.
Storage
Placer your leftover barbecue meatloaf in an airtight container in the fridge. This will keep for up to 4 days.
Freezer
To freeze, let your meatloaf completely cool. Once cooled, slice your meatloaf and wrap individual slides in plastic wrap and then in foil. Store in a freezer-safe bag for up to 3 months. When you are ready to enjoy, thaw in the fridge.
