Tips & Tricks

  • Leftover turkey: This recipe is perfect for using up holiday turkey leftovers. You can also substitute cooked chicken if that’s what you have on hand.
  • Thickening the sauce: Make sure to cook the flour with the butter for a couple of minutes before adding the stock. This step helps remove the raw flour taste and ensures your sauce thickens smoothly without lumps.
  • Customizing the veggies: While mushrooms and green onions are traditional, feel free to add other vegetables like peas, bell peppers, or even frozen mixed vegetables for added color and texture.
  • Serving options: Get creative with how you serve this! While toast and biscuits are classics, you can also spoon it over rice, mashed potatoes, or even puff pastry shells for a more elevated presentation.
  • Season to taste: After simmering, taste the dish before serving and adjust the salt, pepper, or even sherry to suit your preferences.
