It has a delicious creamy tomato flavor (thanks to the tomato and cream cheese) and the chicken is tender and delicious. It of course is a kid-favorite thanks to the addition of the cheese. How to Make Slow Cooker Creamy Tomato Chicken Penne

  • Prepare the slow cooker with nonstick cooking spray. Arrange the chicken breast in the bottom of the slow cooker.

  • Stir together the crushed tomatoes, Italian seasoning, garlic powder, salt, and crushed red pepper flakes. Pour the mixture over the chicken.

  • Dot the sauce with cream cheese. Sprinkle with the grated Parmesan cheese.

  • Cover and cook on high for 3 to 4 hours or high for 6 to 7 hours.
  • With two forks, shred the chicken. Stir in the cooked pasta. Top with the mozzarella cheese. Cover and keep warm until the cheese is melted.

  • Serve garnished with freshly chopped parsley if desired.

  • If you find yourself without pasta you can use cooked rice instead. 
  • You can easily double the recipe if your crock pot is big enough. 
  • If you prefer you do not need to stir in the pasta, you can add it to the top of the pasta if you like to keep it separate.

You will want to store your leftover creamy tomato chicken penne in an airtight container in the fridge for up to 4 days.

The creamy tomato chicken freezes great. If you plan to freeze this, I would not mix in your pasta as it will get mushy as it freezes. You will want to let your chicken completely cool and add it to a freezer-safe container. This will last up to 3 months. When you are ready to enjoy, thaw and warm up to your desired temperature and serve over pasta.

  • 1 (28 ounce) can crushed tomatoes
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • 1 (8 ounce) package cream cheese, cubed
  • 1 cup grated Parmesan cheese
  • 1 (16 ounce) box penne pasta, cooked according to package directions
  • 2 cups shredded mozzarella cheese
