When we have get-togethers on game days I love to have lots of delicious options for our friends to choose from. We have everything from Air Fryer buffalo wings, spinach artichoke dip, and of course this slow cooker low carb parmesan snack mix! Our guests always rave about this parmesan snack mix because the flavor is so good. They literally devour it by the handful. I am so excited to share it with you so that it can be a hit at your next gathering as well.

How to Make Low Carb Parmesan Snack Mix in the Slow Cooker

  • Prepare the slow cooker liner by spritzing with nonstick cooking spray.
  • In a large bowl, combine the nuts.

  • In a small bowl, beat the egg white until frothy. Pour over the nuts and toss to coat.

  • Add the seasonings to the nuts and toss until evenly coated.

  • Place the nuts in the slow cooker, cover, and cook on high for 1 ½ hours, stirring every 15 minutes.

  • Toss the nuts with grated Parmesan cheese and transfer to a rimmed baking sheet covered with parchment or waxed paper. Allow to cool completely.

Tips Tricks and FAQs

  • Feel free to swap out the nuts for different varieties. Any nut will work great. 
  • If you don’t mind about this recipe staying low carb, you can easily add in cheese crackers, pretzels, chex cereal, or any other snacks you would like. Just make sure to add more of the egg white and seasonings based on the amount you add. 
  • You can easily double or triple the recipe depending on your crockpot size.

Storage

You will want to store your snack mix in an airtight container at room temperature for up to 2 weeks.

Ingredients

  • 1 cup roasted cashews
  • 1 cup roasted pistachios
  • 1 cup roasted almonds
  • 1 egg, white only
  • 1 teaspoon parsley flakes
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper
  • Salt, to taste
  • ¼ cup grated parmesan cheese
  • 1 (2.12 ounce) package parmesan cheese crisps
  • Optional: 2 tablespoons water
