One of my favorite things in the entire world are recipes that everyone in the family loves. This healthy slow cooker chicken cacciatore recipe falls into that category. It is simple to make (thank you crockpot), delicious to eat, and it leaves my kids always asking for seconds and thirds.
It is also one of those dishes that you don’t mind serving to friends when they stop by because it a healthy dish everyone always loves to eat! With how easy it is to make (less than 15 minutes of prep) you will be making this recipe on your busiest weekdays for a truly satisfying meal.

How to make slow cooker chicken cacciatore
- Place chicken into the bottom of your crockpot
- Add in the spaghetti sauce, tomato paste, mushrooms, onion, peppers & Italian seasoning.
- Cover and cook for 4-5 hours on high.
Tips Tricks and FAQs
- This recipe calls for chicken thighs, but you can easily substitute it for a boneless skinless chicken if you would like.
- If your family does not like mushrooms you can easily omit them.
- Feel free to use more vegetables than the recipe calls for.
- If your sauce is not thickening remove the chicken and cook your sauce uncovered on high for about an hour. You can also add a mixture of 1 TBS of cornstarch and 1 TBS of water to thicken it as well.
- If you want the chicken flavors to shine through brown your chicken in a pan first and then add it.
- If you prefer crispier vegetables, do not add them in until about 2 hours before your dish is done.

- 3 LBS Bone in, Skin on, Thighs & Drumsticks
- 1 (24 oz) Jar Spaghetti Sauce
- 1 (6 oz) Can Tomato Paste
- 1 Small Can of Mushrooms or a Package of Fresh Sliced Mushrooms
- 1 Onion, sliced
- 1 Green Pepper, sliced
- 1 Red Pepper, sliced
- 1 TSP Italian Seasoning
Instructions
- Place chicken into the bottom of your crockpot
