If you live in the South, you know that black-eyed peas with collard greens are a staple to celebrate the New Year. It is a tradition that on January 1st you eat black-eyed peas, and the more you eat the more luck you will have, but no one has time to soak the beans and wait all day for them to cook. Thankfully there is an easier way. Instant Pot Black-eyed peas are flavorful, easy to make, and ready to enjoy in less than an hour! Once you try making your black-eyed peas in the Instant Pot you will never cook them any other way again. Black-eyed peas are the perfect addition to Cowboy Caviar and other southern dishes!

How to make Black-eyed Peas in the Instant Pot

  • Turn your pot to saute.  Add your chopped bacon.  Allow your bacon to start to cook for a few minutes.
  • Add in your onions and green peppers.  Allow cooking until the onion is getting translucent. 
  • Add in your garlic. Allow cooking until the garlic is getting fragrant. 
  • Add in the paprika, salt & pepper.
  • Add in the chicken broth.
  • Add in the smoked sausage.
  • Add in the black-eyed peas.

  • Add in the collard greens.
  • Press the collard greens down a bit so they are somewhat covered under the broth. 
  • Add in the bay leaves.
  • Close the lid, set to sealing. 
  • PC on HIGH for 17 minutes + do a Natural Release.
  • Once done, give a mix and serve.

Tips Tricks and FAQs

  • Be sure you do a Natural release. This will take about 15 minutes. 
  • If you choose to pre-soak your beans you will want to cut the cooking time in half. 
  • You can easily double this recipe. Do not adjust the cooking time if you do. 
  • When your black-eyed peas are done, there will be a lot of sauce in the pot. Use cornbread to soak up all the yummy juices from the beans. 
  • Be sure to add in all the spices and seasonings. This is what gives the black-eyed peas immense amounts of flavor.

Storage

Store your cooled black-eyed peas in the fridge in an airtight container for up to 5 days. 

Can you freeze cooked Black-eyed Peas?

Yes, you can freeze cooked black-eyed peas. You want to make sure that they are completely cooled prior to freezing. Once cooled, place them in a freezer-safe container. These will store for about 1 month. 

When you are ready to use them, thaw them in the fridge overnight. 

Reheat them in a saucepan on the stove. Add water if needed to prevent sticking.

Ingredients

  • 2-3 Slices Bacon, chopped
  • 1 Small Onion, diced
  • 1 Green Pepper, diced
  • 2 TSP Minced Garlic
  • 3 TSP Paprika
  • Salt & Pepper to Taste
  • 3 ½ Cups Chicken Broth
  • 1 ¼ Cups Dry Black Eyed Peas, rinsed in cold water
  • 1 (14 ounces) package Smoked Sausage, diced
  • 2 Cups Collard Greens, chopped
  • 2 Bay Leaves

Instructions
