Cowboy Caviar is one of those dishes that once you make it or try it you are hooked for life! I remember several years ago visiting a dear friend in Texas who served this at a BBQ.
I fell in love with the colors, the flavor and how simple it was to make! I remember watching her throw this together at the last minute. Ever since that day, it has been my go-to side dish for all the BBQs I attend.
The great thing about Cowboy Caviar is that it is easily a salsa or a salad! Really it is what you prefer!
Pair this with some other favorite sides like Air Fryer Cheeseburger Egg Rolls, or layered salad with berries for the spread of perfect dishes!
What is cowboy caviar made of?
Traditional cowboy caviar is made with black-eyed peas, black beans, Roma tomatoes, corn, bell pepper, onion, avocado, and cilantro that is then topped with a delicious tangy dressing.
How to Make Cowboy Caviar
- In a measuring cup, mix all of the dressing ingredients and whisk to combine.
- Add in tomatoes, black-eyed peas, black beans, corn, red onion, & peppers into a large bowl.
- Mix to combine well.
- Pour the dressing over and mix gently to combine.
- Carefully fold in avocado and chopped cilantro.
- Enjoy!
Tips Tricks and FAQs
- If you find yourself short on time you can my cowboy caviar with Italian dressing. Just forgo the dressing and add Italian dressing instead.
- If you are not a fan of black eyed peas you can use only black beans if you prefer.
- If you can find sweet corn use that, if not a can of regular corn will work perfectly.
Storage
When properly stored in the fridge this recipe will keep for up to 4 days. You will notice some of the ingredients browning, or getting a bit mushy, but you can still eat it.
Make Ahead
This is one of those dishes you can make at the very last minute or ahead of time. You can easily make this up to 24 hours before you are serving it. Just don’t add the avocado until you are ready to serve.

Ingredients
- 3 Roma Tomatoes, seeded and chopped
- 1 (15 ounce) can Black Eyed Peas, rinsed and drained
- 1 (15 ounce) can Black Beans, rinsed and drained
- 1 (15 ounce) can Corn, rinsed and drained
- 1 Small Red Onion, diced
- 1 Bell Pepper, seeded and diced. You can use ½ each of 2 different colored peppers.
- 2 Ripe Avocado’s, diced
- ½ Cup fresh Cilantro, chopped
- Dressing
- ½ Cup EVOO
- 2 TSP Sugar
- ¼ Cup White (or Red) Wine Vinegar
- 1 TSP Chili Powder
- ½ TSP Garlic Powder
- ½ TSP Salt
- 2 TBSP Lime Juice
