This Crockpot cowboy casserole is one of our favorites in our house. With so many delicious flavors and the cheesy goodness that we love, this is one of the most requested dishes in our home. This is a must-make dish that your family will love too. It ranks right up there with our Slow Cooker Chicken Pot Pie.
How to make crockpot Cowboy Casserole
- Brown ground beef & drain.
- Evenly spread ground beef along the bottom of your pot
- Add in potatoes, cream of chicken, chopped onion, diced tomatoes, kidney beans, & taco seasoning on top.
- Cook on HIGH for 4-5 hours and LOW for 7-8 hours.
- Sprinkle cheese on for the last 10-15 minutes to allow time to melt.
Tips Tricks and FAQs
- Get creative! This is a great recipe you can add ingredients too! Add black beans or even a can of corn to the recipe.
- Cream of chicken soup tastes so good with this dish, but cream of mushroom is another great option.
- Spice it up by adding a dash of chili powder or even Tabasco sauce.
- Don’t stop with just cheese on top! Add other favorites like sour cream and chives, and bacon even!
Make Ahead
This is a great dish to make ahead and stash in your freezer! Brown the meat and then put all the ingredients in a Ziploc bag, except for the cheese. Then place it in your freezer for up to 3 months.
When you are ready to make, thaw in your fridge overnight and then add to your crockpot the next morning. You will want to add an additional hour of cooking time (5 hours on high / 9 hours on low).

- 2 Cups Ground Beef
- 3 Large Potatoes, sliced or 2 Pounds Small Red Potatoes, halved
- 1 (10.5 oz) Can Cream of Chicken Soup

This says cook 4 to 5 hrs. on High AND 7 to 8 hrs. on Low. I believe it probably means cook 4 to 5 hrs. on High OR cook 7 to 8 hrs. on Low.
I’d cook it for the recommended time by my choice of High OR Low, & then check it by taste & appearance before adding any additional time to the cook time.
Also, I’d use the halved RED potatoes,& the DARK Red Kidney Beans for delicious appearance & delicious taste.
I’d also choose the Rotel tomatoes with GREEN CHILIES- NOT with Jalapenoes (& add Salsa or Hot Sauce on the side for anyone who wanted it) so more people could eat it.
If you cook up 5-lbs.ground beef in a lg. Crockpot & freeze amounts you frequently use in freezer Zip-locks, you can easily turn this into a virtual Crockpot Dump-&-Run recipe. YAY!!!
