It’s no secret that mashed potatoes are my family’s favorite side! We love that there are a million different ways to prepare them like Mashed Potatoes in the Instant Pot and turn it into a mashed potato bar, but one of our all time favorite ways to enjoy them is in this super delicious mashed potato casserole recipe.
You will love how easy this recipe is to create and that it goes with all your favorite dishes! As a bonus, you can easily make this ahead of time and pop it into the oven when you are ready to bake and enjoy!
How to Make Mashed Potato Casserole
- Pre-heat oven to 350 degrees.
- In a large mixing bowl, mash the potatoes and then add the sour cream, butter, cream cheese, milk, salt, pepper, cheese, green onions, and bacon bits. Make sure to leave a little bit of cheese out to use as garnish later.
- Mix well.
- Transfer to a baking pan/dish.
- Sprinkle remaining cheese on top.
- Bake for 20 minutes.
- Serve & enjoy.
Tips Tricks and FAQs
- You can easily omit the bacon or green onions if you prefer.
- If you want to make this a complete meal you can easily add some cooked chicken tenders and some corn!
- Get creative and try different toppings like jalapenos, french fried onions, or even garlic.
Storage
This mashed potato casserole stores so nicely in the fridge in an airtight container. It will last for about 4 days in the fridge.
Reheating
If you are reheating an individual portion, place it on a microwavable safe dish and cover and heat to your desired temperature in the microwave. If you are reheating the whole dish you can warm it back up in the oven.
Make- Ahead
We love dishes that we can make ahead of time! You can easily make this dish the day before you are planning to serve it. Just cook the potatoes, mix all the ingredients together and place in your casserole dish. Cover and place in the fridge. When you are ready, remove from the fridge and bake and then enjoy.

- 1/2 cup sour cream
- 1/2 cup butter
- 4 oz cream cheese
- 1/4 cup milk
- pepper to taste
- salt to taste
- 2 cups cheddar cheese
- 4 green onions (chopped)
- 2.5 oz bag bacon bits
