We love muffins in our house, but sometimes I hate getting all the different ingredients out when I just want to make a simple batch of muffins. That is why I love these cake mix lemon muffins! They are simple to make (4 ingredients), are full of flavor, and the prep and clean up are so easy. Not only that, but if you have kids that love to bake this recipe is virtually failproof! Once you make this recipe, it will soon be your go-to muffin recipe. Add in poppy seeds or berries for even more flavor.

How To Make Lemon Muffins
- Pre-heat oven to 350 degrees.
- Line muffin pan with cupcake liners.
- In a large mixing bowl, combine cake mix, eggs, milk & butter.
- Scoop the batter into the muffin tin.
- Sprinkle a little sugar on top of each muffin (optional).
- Bake for 15-20 minutes or until a tooth pick comes out clean.
- Serve & enjoy.

- You can easily create lemon poppy seed muffins by adding 2 Tablespoons of poppy seeds to the batter.
- Get creative and add blueberries or raspberries to the batter for even more flavor. Any berries will work, just as long as they are not soggy. I use about ½ cup.
