We love muffins in our house, but sometimes I hate getting all the different ingredients out when I just want to make a simple batch of muffins. That is why I love these cake mix lemon muffins! They are simple to make (4 ingredients), are full of flavor, and the prep and clean up are so easy. Not only that, but if you have kids that love to bake this recipe is virtually failproof! Once you make this recipe, it will soon be your go-to muffin recipe. Add in poppy seeds or berries for even more flavor.

How To Make Lemon Muffins

  • Pre-heat oven to 350 degrees.
  • Line muffin pan with cupcake liners.
  • In a large mixing bowl, combine cake mix, eggs, milk & butter.

  • Scoop the batter into the muffin tin.

  • Sprinkle a little sugar on top of each muffin (optional).
  • Bake for 15-20 minutes or until a tooth pick comes out clean.

Tips Tricks and FAQs

  • You can easily create lemon poppy seed muffins by adding 2 Tablespoons of poppy seeds to the batter. 
  • Get creative and add blueberries or raspberries to the batter for even more flavor. Any berries will work, just as long as they are not soggy. I use about ½ cup. 
  • These are best served warm.
  • Try these with a cream cheese frosting.
  • Love lemon flavor? Add lemon extract to the batter. 

Storage

Store your lemon muffins at room temperature in an airtight container for up to 4 days.

Fridge

You can also store these in the fridge in an airtight container for up to 7 days. 

Freezer

These lemon muffins freeze nicely. Place them in a freezer-safe bag and place them in the freezer for up to 3 months. 

Reheating

These are best enjoyed warm. To reheat, place in the microwave for around 20 seconds until warm.

How do you know when Lemon Muffins are done?

You will know your lemon muffins are done when you insert a toothpick in the middle of the muffin and it comes out clean.
