When a recipe starts going viral online, I usually wait a bit before jumping on the trend. I want to know if it is actually worth making before I share it with all of you. These Oven Baked Ground Chicken Cutlets absolutely passed the test. I have never been the biggest fan of making traditional fried chicken cutlets. My boys love them and would happily eat them every week, but I do not love standing over a pan of oil dealing with the mess, splatter, and cleanup afterward. When I saw people making these baked ground chicken cutlets, I knew I had to give them a try.

The first time I made them, I was honestly surprised by how much they reminded me of a classic chicken cutlet. They came out crispy on the outside, tender on the inside, and had all the flavors we love without frying a single thing. Even better, my boys absolutely loved them. In a house where feeding a family of six can sometimes feel like a full time job, finding a recipe that everyone gets excited about is a huge win. This is one of those recipes that immediately earned a permanent spot in our meal rotation.

How To Make Oven Baked Ground Chicken Cutlets
Step 1
Season the ground chicken.
Step 2
Press into a thin cutlet shape between parchment paper.
Step 3
Add the flour, egg wash, breadcrumbs, parmesan cheese, parsley, & avacado spray.
Step 4
Carefully flip and repeat all of the steps
Step 5
Transfer to baking sheet.
Step 6
Finished golden brown cutlet.
Melissa’s Tips
- Using two sheets of parchment paper made flattening much easier.
- The broiler is what really creates that chicken cutlet appearance.
- Two pounds works fine, but takes a little more patience when flattening.
- Don’t skip the avocado oil spray.

Oven Baked Ground Chicken Cutlets
Ingredients
- 1 to 2 pounds ground chicken
- 1 to 2 teaspoons garlic powder
- 1 to 2 teaspoons onion powder
- All purpose flour
- 3 eggs, whisked
- Panko bread crumbs
- ¼ to ½ cup grated Parmesan cheese
- Fresh parsley, chopped (optional)
- Avocado oil spray
Instructions
- Preheat your oven to 450 degrees.
- Add the ground chicken, garlic powder, and onion powder to a large bowl. Mix until the seasonings are evenly incorporated.
- Place a large sheet of parchment paper on your work surface and generously sprinkle it with all purpose flour.
- Transfer the ground chicken mixture onto the floured parchment paper.
- Press the ground chicken into a thin, even layer, about the thickness of a traditional chicken cutlet. For easier handling, place a second sheet of parchment paper over the top and use a rolling pin to flatten the chicken.
- Sprinkle the top of the chicken with flour and spread it evenly over the surface.
- Brush the top with whisked eggs.
- Sprinkle a generous layer of panko bread crumbs over the top and gently press them into the chicken.
- Sprinkle grated Parmesan cheese over the bread crumbs and gently press it down.
- If using parsley, sprinkle it over the top and gently press it into the coating.
- Spray the surface with avocado oil spray.
- Place another large sheet of parchment paper over the top and carefully flip the chicken over. Remove the top sheet of parchment paper.
- Repeat the coating process on the second side:
- Sprinkle with flour .
- Brush with egg wash.
- Add panko bread crumbs and gently press them in.
- Sprinkle with Parmesan cheese and press lightly.
- Add parsley, if using.
- Spray with avocado oil.
- Carefully transfer the coated chicken cutlet onto a large baking sheet that has been sprayed with avocado oil.
- Bake for 15 to 17 minutes, or until cooked through.
- Remove from the oven and serve as you would traditional chicken cutlets.
