- 16 Ounce Bag Packaged Saffron Yellow Rice (I used Vigo)
- 3 1/4 Cup Water
- 1 TBSP Butter
Instructions
- Pour water into your pot.
- Pour rice in.
- Use a spoon to push the rice under the water so it’s not floating on top.
- Lay butter slices on top. Close the lid.
- Pressure cook LOW for 10 minutes
- Do a natural release for 10 minutes.
- Release remaining pressure.
- Open your lid and fluff and mix your rice.
- Enjoy!

Yes you can double and even triple the recipe depending on the size of your pot.
@Melissa, when doubling the recipe, you double everything exactly (ie. 2 x 16 oz packages of Vigo, 6.5 cups of water)? Or do you use less water? Making this tonight for my daughter’s birthday party and want to be sure to get it right. Thank you!!!

When reviewing these recipes, lots of people forget the time it takes to bring the pot up to pressure – this recipe is likely a wash regarding time savings as compared to the stovetop instructions on the package. A great alternative, though.

Has anyone tried to add anything into the yellow rice. I was thinking maybe cubed chicken breast. Also maybe a bag of mixed veggies too and maybe a can of cream of chicken or cheese.

I followed Melissa’s yellow rice recipe, but I increased the water to 1 3/4Cups & laid 3 b/s breast on top. High pressure for :15. Naturally released pressure. Chicken shredded perfectly & rice was amazing!!
@Shirley, I made a Cuban style yellow rice with sliced Italian sausage, 3 blend frozen peppers mix, 1 can of diced tomatoes and 1 can black beans. Holy moly was it delicious!!! I used the same method, time and setting as above but I precooked the sausage links.
Thank you. I used your times and the switched water for chicken broth. Perfect. But I had a little more yellow rice so I used the amount on the packaging. Perfect easy lunch for my 7 year old who loves the stuff.
