I was at the store this week and saw the saffron yellow rice and thought I haven’t made that in forever! So I grabbed some and you know me, converted it to the Instant Pot!
Is Yellow Rice The Same As Saffron Rice
Yellow rice is basically white rice that is cooked with saffron and/or timer if you give it that bright yellow color. Saffron yellow rice is essentially the same thing.
You will find different ingredients for yellow rice recipes that can change up the flavor a bit.
Can You Cook Boxed Rice in Instant Pot
Yes! This recipe is specifically for saffron yellow rice. I have found it is so fluffy and tender each and every time I have made it.
My kids went nuts for this recipe. I have since made it like 3 more times over the past two weeks!
How To Make Instant Pot Packaged Saffron Yellow Rice
- 16 Ounce Bag Packaged Saffron Yellow Rice (I used Vigo)
- 3 1/4 Cup Water
- 1 TBSP Butter
Instructions
- Pour water into your pot.
- Pour rice in.
- Use a spoon to push the rice under the water so it’s not floating on top.
- Lay butter slices on top. Close the lid.
- Pressure cook LOW for 10 minutes
- Do a natural release for 10 minutes.
- Release remaining pressure.
- Open your lid and fluff and mix your rice.
- Enjoy!

How to Store Leftover Saffron Rice
If you have leftovers, simply place them in an airtight container. Your rice will store for up to five days in the fridge when it is stored properly.
You can reheat in the microwave or opt to reheat on the stove. If you heat it on the stove I suggest adding a little water or chicken stock to help keep it moist as it reheats.
If you don’t add a little liquid it could dry out as you warm it in a pan.

*I have also used this recipe with the Goya multi pack box, which includes 3 (8 ounce) packages of yellow rice, to use this recipe for one 8 ounce package, reduce the water to 1 2/3 cup of water & 1/2 TBSP of butter
**For 2 (7 ounce) Packages of Goya Yellow Rice, use 3 cups of water, 1 TBSP butter

I am hoping to make Vigo Yellow Rice for my son’s wedding celebration. Would it be possible to scale this up? I need about 36 servings but I can make it in batches. Thanks a bunch!
Yes you can double and even triple the recipe depending on the size of your pot.
@Melissa, when doubling the recipe, you double everything exactly (ie. 2 x 16 oz packages of Vigo, 6.5 cups of water)? Or do you use less water? Making this tonight for my daughter’s birthday party and want to be sure to get it right. Thank you!!!

When reviewing these recipes, lots of people forget the time it takes to bring the pot up to pressure – this recipe is likely a wash regarding time savings as compared to the stovetop instructions on the package. A great alternative, though.

Has anyone tried to add anything into the yellow rice. I was thinking maybe cubed chicken breast. Also maybe a bag of mixed veggies too and maybe a can of cream of chicken or cheese.
@Shirley, I wondered the same thing! Melissa, can we add b/s chicken breast to it & shred the chicken in the rice when it’s done?

I followed Melissa’s yellow rice recipe, but I increased the water to 1 3/4Cups & laid 3 b/s breast on top. High pressure for :15. Naturally released pressure. Chicken shredded perfectly & rice was amazing!!
@Shirley, I made a Cuban style yellow rice with sliced Italian sausage, 3 blend frozen peppers mix, 1 can of diced tomatoes and 1 can black beans. Holy moly was it delicious!!! I used the same method, time and setting as above but I precooked the sausage links.
Thank you. I used your times and the switched water for chicken broth. Perfect. But I had a little more yellow rice so I used the amount on the packaging. Perfect easy lunch for my 7 year old who loves the stuff.
