Cinnamon Pop-Tarts
Everyone loves brown sugar pop tarts AKA cinnamon pop tarts. In fact, it was my go-to snack as a child and to date is still my kid’s go-to snack after school. There is something about the flaky pastry crust that is filled with brown sugar and cinnamon that is then glazed with a delicious cinnamon glaze, yum! But the problem is it is loaded with all things that are not great for you! Since my family loves brown sugar pop tarts so much I set out to make an easy better for you recipe, and we are so excited to share it with you!
These cinnamon pop tarts take about 10 minutes of prep, bake for 15 and then sit for another 10 and are so easy to make, thanks to the fact that we use store bought dough. Once you try these homemade cinnamon pop tarts you may just find yourself making them every single day.

Ingredients:
- 1 cup light brown sugar
- 2 Tbsp salted butter
- 3 tsp ground cinnamon, divided
- 2 9-inch store-bought pie crusts
- 2 Tbsp whole milk
- 1 tsp vanilla extract
- 2 cups powdered sugar
How to Make Cinnamon Pop-Tarts
- Preheat the oven to 425 degrees Fahrenheit.
- In a medium sized bowl, combine the light brown sugar, butter, and half of the cinnamon. Use a fork or your hands to work the ingredients together until crumbly and homogenous.
- Set the bowl aside and roll out both sheets of pie crust.
- Cut the crusts into 3×4 inch rectangles. You can work the leftover dough into a ball, roll it back out, and cut out additional rectangles until you have 10-12.
- Spoon the brown sugar filling onto half the rectangles and top each one with another rectangle of dough.
- Use a fork to crimp the edges of the pop-tarts and bake for 15 minutes.
- While the pop tarts are baking, prep the glaze by whisking together the powdered sugar, remaining cinnamon, milk, and vanilla until smooth.
- Use a pastry brush to cover the top of each pop tart with glaze as they come out of the oven.
- Allow to cool for 10 minutes, serve, and enjoy!
Tips Tricks and FAQs
- You will want to let your pie crust sit at room temperature for about 10 to 15 minutes before rolling it out. This will make it easier to roll and less stiff and helps the dough to not tear.
- It is tempting to add more butter to the filling, but you will want to stick right to the 2 Tablespoons. Adding more will cause the filling to seep out of the pop-tarts quite a bit. It is normal for a little bit of the filing to leak out.
- If you find all your pop-tarts are leaking, you will want to seal them a little bit better. To do this, dip your finger in water and run it along the bottom edge before you crimp the top of the rectangle to the bottom.
Storage
You will want to store your leftover pop-tarts in an airtight container at room temperature or in the fridge. These will keep for about 5 days.
Reheating
I love to throw my pop tarts in the toaster, toaster oven, or air fryer to reheat. All three of these ways make them nice and crispy and warm!
