Ingredients:

  • 1 cup light brown sugar
  • 2 Tbsp salted butter
  • 3 tsp ground cinnamon, divided
  • 2 9-inch store-bought pie crusts
  • 2 Tbsp whole milk
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

How to Make Cinnamon Pop-Tarts

  • Preheat the oven to 425 degrees Fahrenheit. 
  • In a medium sized bowl, combine the light brown sugar, butter, and half of the cinnamon. Use a fork or your hands to work the ingredients together until crumbly and homogenous.
  • Set the bowl aside and roll out both sheets of pie crust. 
  • Cut the crusts into 3×4 inch rectangles. You can work the leftover dough into a ball, roll it back out, and cut out additional rectangles until you have 10-12.
  • Spoon the brown sugar filling onto half the rectangles and top each one with another rectangle of dough. 
  • Use a fork to crimp the edges of the pop-tarts and bake for 15 minutes. 
  • While the pop tarts are baking, prep the glaze by whisking together the powdered sugar, remaining cinnamon, milk, and vanilla until smooth.
  • Use a pastry brush to cover the top of each pop tart with glaze as they come out of the oven.
