Tips Tricks and FAQs
- Be sure to keep the dough chilled. It is much easier to work with and prevents sticking when it is chilled.
- You want to be sure you do not overfill your hand pies. Over filling them will cause your filling to leak out.
- Don’t skip the egg wash. This helps the crust become crispy and brown.
- You can omit the icing if you choose.
- You can make your own homemade pie crust as well! If you do make your own, just be sure to chill it before rolling out your hand pies.
- If you have a favorite homemade lemon pie filling, you can substitute it for the canned filling.
- Be sure to let these cool for about 5 minutes before adding the icing and serving because the lemon filling will be hot!
Storage
Fridge
You will want to store your lemon hand pies in the fridge in an airtight container for up to 3 days.
Freezer
These freeze nicely. First, let your lemon hand pies completely cool, and then flash freeze them on a baking sheet lined with parchment paper for about 1 hour. Once frozen, add them to a freezer safe bag. These will store for about 1 month in the freezer.
Can I bake these in the oven?
Yes! You can bake these lemon hand pies in the oven. Preheat your oven at 400 degrees and line a baking sheet with parchment paper. Bake them for about 20 minutes, or until golden brown and crispy.
What Icing Do I Use for These Lemon Hand Pies?
For this icing, I recommend using 1 cup of powdered sugar to ½ lemon. You will want to whisk this until it is well combined. You want to make sure it is drizzle consistency. If you want to thin it out more, you can add more lemon or a dash of milk.
