There is something about lemon bars that are just heaven on earth to me! Maybe it is the perfect balance of sweetness and tartness in the most decadent irresistible way! One thing is for sure, I would give up just about anything to enjoy one of these lemon bars!
You will fall in love with these at first bite!

How to Make Lemon Bars
1. Preheat the oven to 350 degrees Fahrenheit and grease a 9×13 pan with butter and set aside.
2. Add the flaky crust ingredients into the bowl and mix with a hand mixer on low speed for 2 minutes until the consistency is crumbly.
3. Add the crust mixture into the prepared pan. Use your fingers to press firmly to create a compacted even layer
4. Bake the crust for 22 minutes until the edges are golden brown. Remove from the oven and place on a cooling rack / or towel. (The crust does not need to cool beyond the time it takes to prepare the lemon custard.)
5. In a bowl add the lemon custard ingredients. Use a hand mixer on low for 2 minutes until the consistency is smooth and silky. Pour the lemon custard over the crust.
6. Bake for 25 minutes. Use a toothpick to make sure the lemon custard comes out clean.
7. Place the 9×13 baking dish on a cooling rack for 1 hour until cooled. Transfer to the fridge for 2 hours or until chilled.
8.. Cut into 20 bars.
Tips Tricks and FAQs
- One of our favorite things to do is add powdered sugar and a slice of lemon to the tops of each bar.
- You want to avoid using a metal dish because your lemon bars will get a metallic flavor. Be sure to stick with a ceramic or glass pan.
- Fresh lemon juice gives you a really beautiful lemon flavor. Try to avoid store bought lemon juice if you can when making this dessert.
- Be sure to let the lemon bars chill for 2 hours. This helps them completely set.
Storage
You will want to store these lemon bars in the fridge covered for up to 5 days.
Can you freeze lemon bars?
Yes! You can freeze these lemon bars! You will want to let them completely cool and freeze the pan wrapped in plastic wrap and then in foil. They will keep for up to 3 months.
If you prefer you can wrap each bar individually as well.
How do you know when lemon bars are baked?
You will want to insert a toothpick into your lemon bars to see if they are done. If it comes out clean then they are done.
Your lemon bars may still be a little wobbly and appear to not be set, that is okay. They will continue to bake while cooking and then set as they chill.
Can these lemon bars be gluten-free?
You can make these gluten-free by using gluten-free flour.

- 1 1/2 cup all purpose flour
- 2/3 cup powdered sugar
- 3/4 cup softened butter (1 1/2 sticks of butter)
- 1/4 teaspoon of vanilla
- 1/4 teaspoon of baking soda
- 1/4 teaspoon zest from one lemon
- Lemon Custard Ingredients
- 6 eggs
- 2 cups white sugar
- 6 tablespoon all-purpose flour
- 1/2 cup freshly squeezed lemon juice (1 1/2 lemons)
- 1/2 teaspoon zest from one lemon - teaspoon
