If you love chocolate we have a treat for you! These brownie mix cookies are full of so much chocolate flavor and so easy to make. These delicious cookies have a perfectly crispy edge with a moist chocolaty center. These may just be my favorite chocolate cookie there is!

Ingredients:
6 tablespoons canola or vegetable oil
2 eggs
2 tablespoons water
1 (18 ounce) box brownie mix
½ cup all purpose flour
¾ cup semisweet chocolate chips
How to Make Brownie Mix Cookies
- Preheat the oven to 350°. Prepare a large rimmed baking sheet with parchment paper.
- In the mixing bowl, whisk together the oil, eggs, and water.
- Over the liquids, dump the brownie mix and flour. Using a fork, sift the dry ingredients together slightly before mixing them with the liquid ingredients underneath.
- When the batter is well blended, fold in the chocolate chips, reserving a few for topping the cookies.
- Using a small 1 tablespoon cookie scoop, portion the cookies and place them approximately 1 inch apart on the prepared baking sheet. Press any remaining chocolate chips into the tops of the dough.
- Bake in the oven for 9 to 10 minutes or until the cookies are no longer shiny. Overbaking the cookies will make them tough.
- Allow the cookies to cool on the baking sheet before removing them to store them in an airtight container.
Tips Tricks and FAQs
- This recipe is super versatile. Swap out the semi-sweet chocolate chips for white chocolate chips, dark chocolate chips, peanut butter chips, or even butterscotch chips.
- You could even add caramel bits into the mix for a chewy caramel flavor.
- If you prefer you can omit the chocolate chips.
- Use a 1 Tablespoon cookie scoop to ensure all your cookies are the same size.
- If you are worried about your cookies sticking to the pan, you can use nonstick cooking spray or a piece of parchment paper.
- Be sure to let your cookies sit for at least 10 minutes on the tray after baking. If you try to move them sooner to the wire cooling rack your cookies will fall apart.
Storage
You will want to store your brownie mix cookies at room temperature in an airtight container. These will keep for up to 5 days.
