How to Make Air Fryer Plantain Chips with Guacamole
- Start by removing the peel of the plantain. First cut off the ends of your plantain on both sides, and then make an incision into the peel lengthwise, but make sure you don’t cut into the plantain. This makes it easier to remove the peel.
- Then slice your plantain with a mandolin slicer, as thin as possible, or to your liking.
- Mix the sliced plantain, coconut oil, salt and pepper and massage all the pieces, to make sure they all absorb some of that coconut oil.
- Place them in the air fryer in a single layer, you will probably have to work in 2 or 3 batches.
- Cook them 9-11 minutes, or until golden brown and crispy.
- Repeat until all slices have been air fried.
- While your plantains are in the air fryer, make your Guacamole.
- Peel your avocado and remove the pit.
- Mash your avocado in a small bowl.
- Dice your tomato and onion. Then add them to the mashed avocado.
- Add in lime juice and cilantro
- Season with salt and pepper. Set aside.
- Let the chips cool off for a few minutes, and then serve with your avocado dip.
- Enjoy!
