My kids love peanut butter and jelly sandwiches, especially with our Instant Pot cherry jam as well as our Instant Pot Strawberry jam. They love them so much that most of the time they are eating them every single day, which I don’t mind because peanut butter is loaded with protein. So the other day while my son was begging for a Peanut Butter sandwich for breakfast I decided to add a little twist to it, meet our new family favorite Peanut Butter and Jelly French Toast.
This recipe is so simple to make (less than 10 minutes) and they are so addictive, so much so that your kids might just be asking for them for breakfast, lunch, and dinner once they try them.
How to make stuffed PB & J French Toast
- Make 3 peanut butter and jelly sandwiches. Do not overfill with peanut butter, it will get runny.
- In a bowl wide enough to accommodate your sandwich, whisk your eggs, milk, and vanilla extract.
- Dip your sandwiches into the egg mixture.
- In a skillet, melt butter over a medium flame.
- Cook each sandwich 2-3 minutes per side, gently flipping.
- Garnish with powdered sugar.
Tips Tricks and FAQs
- Nutella fans! Switch out the jelly for Nutella for a flavor explosion in your mouth.
- Be sure to not overfill your sandwich with peanut butter. This can cause it to run out of the sandwich and be a little bit messy if you are planning to pick it up and eat it… But then again, it might not be such a bad thing.
- Feel free to use your favorite type of peanut butter, chunky or smooth, natural, etc. they all make for the perfect sandwich.
Storage
It is best to make this stuffed french toast and enjoy it right away. If you would like to store it cover it and place it in the fridge for up to two days.
How to Keep Frech Toast warm?
To keep your stuffed french toast warm you will want to lay your cooked french toast on a tray and place in the oven set to 200 degrees Fahrenheit.
How long do you soak the sandwich for?
When you are making stuffed french toast you don’t want to soak it for too long in the egg mixture. Just dip it in (make sure both sides of the sandwich are covered) and then place in the pan. Be sure to let the excess egg mixture drip back into the mixture.
