It is filled with so much nutritional goodness and is so easy to make. You will find yourself making it again and again! In fact, it is so good, you will no longer be rushing to Trader Joe’s to pick it up because you can make it right at home.
Ingredients
½ head cabbage, thinly sliced
1 ½ English cucumbers, julienned
1 bunch of green onions, thinly sliced
For the dressing:
¼ cup olive oil
2 lemons, juice only
2 tablespoons rice vinegar
1 cup packed baby spinach
1 cup fresh basil
⅓ cup nutritional yeast
¼ cup cashews
2 cloves garlic
1 shallot
1 teaspoon salt
⅓ cup grated parmesan cheese
