Chicken Green Bean Casserole
I love one-dish wonders. Anytime I can make a complete meal in one dish I am one happy lady! This chicken green bean casserole is a family favorite.
My family loves the sauteed mushrooms and onions with the tender pieces of garlic that are then combined with all the other ingredients to make a perfectly hearty meal in less than 1 hour. It is a spin off of the traditional crock pot green bean casserole, but adds more flavor and protein to really give this dish the one dish stamp of approval to feed your hungry family.
If you love casseroles you will definitely want to add these favorites to your meal plan as well: Cornbread Ground beef casserole, ground beef casserole, and million dollar chicken casserole.
How to Make chicken Green Bean casserole
- Preheat the oven to 350 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.
- In a medium skillet over medium-high heat, melt the butter. To the butter add the mushrooms and onion. Cook for 5 to 6 minutes or until the vegetables are softened. Stir in the garlic.
- Add the flour, salt, and pepper to the skillet and stir to coat the onions and mushrooms. Once the flour is completely incorporated, stir in the chicken stock. Continue stirring until the mixture begins to thicken. Then, add half and half. Reduce the heat and stir as needed until the sauce has thickened enough to coat the back of a spoon.
- In a large bowl, mix together the chicken, green beans, and 1 cup of fried onions. Add the sauce and stir until everything is evenly coated.
- Transfer the mixture to the prepared casserole dish and spread evenly.
- Bake for 30 minutes, uncovered.
- Carefully top the casserole with the remaining fried onions and bake for 5 minutes more.
Tips Tricks and FAQs
- Any type of chicken will work. I love to use rotisserie chicken for a quick and easy dish.
- If you prefer you can use a different type of cheese or omit it completely. Parmesan cheese and mozzarella are good options.
- While I use chunks of chicken, you can also shred your chicken if you want the chicken more evenly distributed throughout the dish.
- You can make this dish without the chicken if you want a vegetarian option.
- When preparing the green beans you want to make sure that they are bite-sized pieces.
Storage
Store your leftover chicken green bean casserole in the fridge in an airtight container for up to 5 days.
