This chicken cordon bleu casserole is loaded with chicken, pieces of ham, and cheese that is then covered with a delicious creamy sauce that is covered with a layer of breadcrumbs that is baked in the oven for a quick and easy weeknight dinner that everyone always loves. This is one of our favorite chicken casserole recipes.

One of my favorite things to make this time of year is casseroles. They are quick and easy and super filling. One of my family’s favorites is this easy to make chicken cordon bleu casserole. It is loaded with chicken and bits of ham that are then covered with creamy sauce and cheese. It is a hearty meal that leaves everyone feeling full without all the hassle of traditional chicken cordon bleu.

Ingredients:

  • Chicken breast (2 pounds)
  • Ham cut into small pieces (½ cup)
  • Half onion chopped
  • 4 garlic minced
  • Mozzarella cheese shredded (1 cup)
  • Cilantro (to garnish)
  • Parmesan cheese shredded (¼ cup)
  • Breadcrumbs (1/3 cup)

Sauce: 

  • Heavy cream (1 cup)
  • Chicken broth (1 cup)
  • 1 tablespoon of butter
  • Salt and pepper to taste

How to Make Chicken Cordon Bleu Casserole

  •     Preheat the oven to 350 F.
  •     Prepare the sauce. In a small saucepan, melt the butter. Add heavy cream, chicken broth, salt, and pepper. Whisk until it starts boiling. Put aside. 
  •      Heat oil in the skillet and lightly fry the chicken on both sides.
  •      Lay the chicken in the bottom of a 9×13 inch baking pan. 
  •      Lay slices of ham on top of the chicken. 
  •      Sprinkle with chopped onion and minced garlic. 
  •      Sprinkle it with mozzarella cheese.
  •      Pour the sauce evenly over the chicken. 
  •      Sprinkle the dish with cilantro and shredded parmesan cheese. 
  • Cover with breadcrumbs.
  •      Cover with foil. Bake for 35 minutes.
  • Remove the foil and bake for 10 more minutes. 
  • Take it out of the oven and let it cool for 10 minutes before serving.

Tips Tricks and FAQs

  • Feel free to use any cooked chicken. Rotisserie chicken in this dish is a great option and saves time. If you opt to do this, you can skip to step 3. 
  • I prefer to cut my ham in pieces, but you can use slices of ham as well. 
  • Traditional chicken cordon bleu uses swiss cheese. You can swap out the mozzarella for shredded swiss if you prefer. My kids like mozzarella better in this dish. You can also use provolone or cheddar. 
  • You can use your favorite breadcrumbs or panko crumbs. 
  • Be sure to let this dish sit for at least 10 minutes prior to serving. 
  • If you are worried that your chicken may dry out too much while cooking,  you can double the amount of sauce you add to your casserole.

Storage

Store your leftover chicken cordon bleu casserole covered in the fridge for up to 3 days. You can also store it in an airtight container if you prefer.
