Buckeye cookies only need a few ingredients to be made. You have a peanut butter ball that is dipped almost all the way in rich chocolate.

Why Are They Called Buckeyes
Buckeyes are similar to peanut butter balls, which are completely covered in chocolate. Named for its resemblance to the nut of the Ohio Buckeye tree, the state tree of Ohio, this candy is particularly popular in Ohio and neighboring states.
One thing I know for sure is, they are hugely popular in Old Bridge, NJ! We all LOVE them in my house!!

Tip For Making Buckeye Cookies
One key component is the peanut butter dough. You use powdered sugar to help thicken up the mixture,
The key is to get the dough to the point when you touch it, you find it doesn’t stick to your fingers. If the dough sticks to your fingers add in more powdered sugar. Mix well and try again. You want the dough to roll easily without being a mess.
How Do You Dip Buckeye Peanut Butter Balls
To dip your balls, you will stick a toothpick in the center of a ball and lower it into the chocolate. Dip down part of the way so that most of the ball is covered.
Place balls on parchment or wax paper to dry. Remove the toothpick and then use your finger to smooth the hole.
Can I Use Regular Chocolate Chips For Dipping Buckeye
You are more than welcome to use regular chocolate chips to replace chocolate wafers if you need to. The one thing is if you use just chocolate chips it will take a lot longer for the chocolate to set up.
What I do is add a teaspoon of shortening in with the chocolate chips when I go to melt. This will allow the chocolate to harden fast without needing to sit in the fridge all night to set up. It will not really affect the flavor of the chocolate at all.
How to Store Peanut Butter Buckeye Candies
You can store your Buckeye candies at room temperature in an airtight container or place them in the fridge. They will last around a week.
Can You Freeze Buckeye Cookies
Yes, you can freeze any extra Buckeye cookies you have. Place in a freezer friendly container and store for up to 1-3 months. Thaw on the counter at room temperature or place in the fridge the day before you plan to eat.
Can You Use Crunchy Peanut Butter for Buckeye Cookies
You could use crunchy peanut butter if you prefer. You will find with crunchy peanut butter you won’t get as smooth as balls, but the flavor will still taste great.
So choose whatever you prefer. Just know the shape will not be as smooth due to the nuts.

Buckeye Cookies
delicious peanut butter fudge balls dipped in chocolate
Ingredients
- 12 oz creamy peanut butter
- 1/2 C unsalted sweet cream butter, softened
- 1 tsp vanilla extract
- 3 1/2 C powdered sugar
- 1 bag of ghiradelli dark chocolate melting wafers
Instructions
- In a standing mixer, beat peanut butter and butter until creamy and combined. Stir in vanilla. Add powdered sugar and beat on low speed until smooth.
- Using a small ice cream scooper, scoop dough into your hands and roll into 1 inch balls and place in the freezer for at least 1 hour.
- Using a double boiler, melt the dark chocolate melting wafers,
- Using a tooth pick, poke the peanut butter balls in the center and carefully pick it up, using the toothpick, dip the peanut butter balls 3/4 of the way into the chocolate
- Carefully shake off any excess chocolate
- Place onto cookie sheet
- Repeat steps with remaining peanut butter balls
- Once dipped, set aside for chocolate to harden
