Ingredients
1 Package chicken thighs, I used a family package with 10 thighs
Carrots (Just enough to place among the chicken and as many as you can fit so that you can have enough as your side vegetable)
Chopped/sliced onions or shallots
Pepper
Paprika
Garlic Powder
Onion Powder
Kinder’s Garlic Parmesan (or any of your favorite seasoning blends)
Olive Oil (enough to just coat your thighs, (aprx 1-2 TBSP)
Fresh thyme or rosemary
2 Cups Bone Broth
¼ Cup Cornstarch
¼ Cold Water
Instructions
Preheat oven to 350 degrees
Place chicken thighs in a baking dish.
Very generously season your chicken. You can use your favorite seasoning blends. I put my choices in the ingredients list.
Drizzle olive oil over the chicken thighs. Use some tongs to coat all of your thighs with some of the olive oil and your seasonings.
Tuck carrots in between your chicken thighs, fit in as many as you can, they will cook even if not perfectly tucked in.
Sprinkle onions/shallots over the top.
Add in 2 cups of bone broth.
Place fresh rosemary or thyme on top.
Cover & Bake at 350 degrees for 90 minutes.
Remove from the oven. Turn the oven up to 450 degrees.
Remove the thyme or rosemary.
Carefully drain out the liquid from your pan.
Make a corn slurry with cornstarch and water.
Mix in with your liquid/gravy. Whisk together and pour back into your baking dish.
Put back in the oven at 450 degrees for another 20 minutes.
While that is cooking, prepare either white rice or mashed potatoes.
Remove from the oven and enjoy!
