Reuben Rolls
Reuben Rolls are super delicious and easy to make as it combines pizza crust dough, corned beef, swiss cheese, sauerkraut, and thousand island dressing to create an easy version of the classic Reuben. Bake them or Air fry for the most delicious Reuben roll treat.

In our house, we love sandwiches like our Air Fryer BLT and our Air Fryer Tomato, Pesto, Mozzarella Grilled Cheese! They are quick and easy to make and can feed the whole family in minutes! One of our favorite sandwiches to make though is a Classic Reuben, but the other day I found myself without any bread at home, say what?! So I decided to create a fun alternative to this recipe and made Reuben rolls with pizza crust and my gosh it was delicious!
You will absolutely love the flavor of this dish! These would be perfect for parties, dinners, on the go, and anytime you want a quick meal that everyone will love!
How to Make Reuben Rolls
-| Preheat the oven to 425 degrees. Prepare a large rimmed baking sheet with parchment paper and spritz with nonstick cooking spray.
-| Roll out the pizza dough into a large rectangle, approximately 12 inches by 9 inches. Cut the pizza dough into eight equal rectangles.
-| In a medium bowl, stir together the sauerkraut and the dressing.
-| On each small rectangle, place a layer of corned beef. Over the beef, add a layer of 2 tablespoons of the sauerkraut mixture. Top with a slice of cheese.
-| Roll up the pizza dough from one short end to the other, tucking the sides as you roll to hold the ingredients inside.
-| Place the roll with the seam-side down on the baking sheet.
-| Bake for 12 to 14 minutes or until the dough is golden.
-| Serve with additional salad dressing if desired.
Tips Tricks and FAQs
- Swap out the pizza dough for refrigerated crescent roll doll. Just Roll out the crescent rolls and then follow the recipe and then roll the crescent rolls closed.
- Be sure you completely dry the sauerkraut before adding to your mixture.
- If you want the flavor of a true Reuben you can swap out the thousand island dressing for Russian dressing.
Storage
These are best enjoyed right away, but if you would like you can save the leftovers in the fridge in an airtight container for a day or two. You can expect the bread to become a bit soggy from the dressing.
Make Ahead
You can easily make these ahead of time before you bake them. Just prepare like normal and then cover and place in the fridge. You just want to make sure you completely dry the sauerkraut before adding. Pull out of the fridge and bake when you are ready to enjoy them!

- 1 cup sauerkraut, well-drained
- 2 tablespoons Thousand Island dressing
- 1 pound deli-style corned beef, cut in half
- 4 slices Swiss cheese, cut in half

Notes
Air Fry: Preheat the air fryer to 400 degrees. Place on greased air fryer basket. Air fry for 8-12 minutes until golden brown.
