Pinwheel Sandwiches

Ingredients:
4 large tortillas
2/3 cup cream cheese spread
8 slices deli turkey
1/2 cup thinly sliced red bell pepper strips
1/2 cup matchstick carrots
1/2 cup thinly sliced yellow bell pepper strips
1/2 cup baby spinach leaves
1/2 cup shredded purple cabbage
How to Make Pinwheel Sandwich
1. Using a butter knife, spread a thin layer of cream cheese onto the tortilla, making sure to extend the cream cheese all the way to the edges.
2. Layer the turkey slices onto the left side of the tortilla. Then add 2 tablespoons of each vegetable in rows across the wrap. Be sure to leave a 1 inch space at the end of the wrap.
3. Gently and firmly roll up the tortilla. Cut the rolled pinwheel crosswise into 2-inch sandwiches. Serve immediately or refrigerate for later use.
